Ingredients
Peach Filling
- 8 fresh peaches - peeled, pitted, and sliced into thin wedges
- ¼ cup white sugar
- ¼ cup brown sugar
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
Cobbler Topping
- 1 cup all-purpose flour
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- ¼ cup boiling water
Topping Garnish
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
Instructions
- Prepare Ingredients: Gather and prepare all ingredients as listed. Peel, pit, and thinly slice the peaches for the filling.
- Preheat Oven: Set your oven to 425°F (220°C) and allow it to fully preheat while you prepare the filling and topping.
- Mix Peach Filling: In a large bowl, combine the sliced peaches, ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, nutmeg, fresh lemon juice, and cornstarch. Toss gently to evenly coat the peaches with the mixture.
- Bake Peaches: Pour the peach mixture into a 2-quart baking dish and bake in the preheated oven for 10 minutes to start softening and releasing juices.
- Make Cobbler Topping: In another bowl, whisk together flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt. Cut in the chilled butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs. Stir in boiling water until just combined.
- Top the Peaches: Remove the partially baked peaches from the oven. Drop spoonfuls of the topping mixture evenly over the peaches.
- Add Sugar-Cinnamon Garnish: Combine 3 tablespoons white sugar and 1 teaspoon ground cinnamon in a small bowl and sprinkle evenly on top of the cobbler topping.
- Bake Cobbler: Return the cobbler to the oven and bake for about 30 minutes, or until the topping is golden brown and set.
- Serve: Let the cobbler cool slightly before serving warm, optionally with ice cream or whipped cream.
Notes
- Use ripe but firm peaches for the best texture and flavor.
- If fresh peaches are not available, frozen peaches can be substituted but may need extra thickening.
- For a gluten-free version, substitute the flour in the topping with a gluten-free all-purpose blend.
- Chilling the butter helps achieve the crumbly texture in the topping.
- This cobbler is best enjoyed fresh but can be refrigerated and reheated gently.
