These French Beef Dip Sliders feature tender roast beef layered on buttery slider buns with melty provolone cheese and caramelized onions. Served warm with a homemade savory au jus for dipping, they make an irresistible appetizer or meal that's packed with rich, juicy flavor and a perfect balance of textures.

Ingredients

Slider Sandwiches

  • 9 slider buns
  • 3 tbsp butter
  • 2 yellow onions, thinly sliced
  • ½ tsp salt
  • ½ tsp thyme
  • 3 tbsp prepared horseradish
  • 2 tbsp mayonnaise
  • 9 ounces thinly sliced roast beef
  • 7 ounces thinly sliced provolone cheese
  • 2 tbsp melted butter
  • ¼ tsp garlic powder
  • 1 tsp finely chopped parsley

Au Jus

  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1 tbsp flour
  • 1 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Caramelize Onions: Melt 3 tablespoons of butter in a skillet over medium heat. Add the thinly sliced onions, season with ½ teaspoon salt and ½ teaspoon thyme, and cook for 30 to 45 minutes, stirring occasionally, until the onions are soft, golden, and caramelized. Add a splash of water if the onions start to dry or burn.
  2. Preheat Oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the sliders.
  3. Prepare Horseradish Mayo: In a small bowl, combine 3 tablespoons prepared horseradish with 2 tablespoons mayonnaise and mix well. Set aside.
  4. Assemble Sliders: Carefully slice the slider buns horizontally so the bottoms remain connected in one piece and the tops are connected in another piece. Place the bottom halves on a baking sheet. Layer the roast beef evenly over the buns, then add the provolone cheese slices, followed by the caramelized onions. Spread the horseradish mayo evenly over the top halves of the buns, and place the tops back on to close the sliders.
  5. Brush with Butter Mixture: In a small bowl, mix 2 tablespoons melted butter with ¼ teaspoon garlic powder and 1 teaspoon finely chopped parsley. Brush this mixture generously over the top of the assembled buns.
  6. Bake Sliders: Cover the sliders with foil and bake in the preheated oven for 20 minutes until the cheese has melted. Remove the foil and continue baking for an additional 5 minutes until the tops are golden brown.
  7. Make Au Jus: While the sliders bake, melt 2 tablespoons butter in a saucepan over medium-high heat. Add the minced garlic and sauté for 1 minute. Whisk in 1 tablespoon flour to form a roux and cook briefly. Gradually whisk in 1 ½ cups beef broth and 1 tablespoon Worcestershire sauce until smooth. Simmer for 4 to 5 minutes until thickened. Season the au jus with salt and pepper to taste. Remove from heat.
  8. Serve: Serve the warm French Beef Dip Sliders with a side bowl of the rich au jus for dipping, enjoying the savory, juicy, cheesy bites dipped in flavorful broth.

Notes

  • Caramelizing the onions low and slow is key to developing deep flavor and sweetness.
  • If you prefer, you can substitute provolone with other melting cheeses like Swiss or mozzarella.
  • The horseradish mayo adds a nice tangy kick; adjust the amount to your taste.
  • Ensure to cover the sliders while baking to help the cheese melt evenly before browning the tops.
  • The au jus can be made ahead and kept warm when ready to serve.
  • Use freshly sliced roast beef for best texture and flavor.
  • These sliders are perfect for parties or game days and can be doubled easily for larger groups.
