Description

Delightfully thin and tender eggnog crepes served with a creamy, spiced eggnog sauce, dusted with powdered sugar and garnished with fresh pomegranate arils. This festive breakfast or dessert recipe combines the rich flavors of traditional eggnog with delicate crepes, perfect for holiday gatherings or special occasions.

Ingredients

Eggnog Sauce

  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 2 cups eggnog

Eggnog Crepes

  • 1 ½ cups all-purpose flour
  • ⅛ teaspoon granulated sugar
  • ⅛ teaspoon salt
  • 2 large eggs
  • 2 cups eggnog
  • ¼ cup milk
  • Butter, melted, for cooking
  • Powdered sugar, for dusting
  • Pomegranate arils, for garnish

Instructions

  1. Make the eggnog sauce: In a double boiler, combine flour, sugar, and salt. Gradually whisk in the eggnog until the mixture is smooth and free of lumps.
  2. Cook the eggnog sauce: Over medium heat, cook and stir the mixture continuously until it thickens, approximately 8 minutes. Be careful not to let it burn or form lumps.
  3. Cool the sauce: Remove the thickened sauce from heat and let it cool slightly. Then cover and refrigerate it until ready to serve.
  4. Prepare the crepe batter: In a large bowl, whisk together flour, sugar, and salt. Create a well in the center, crack the eggs into it, then slowly mix in the eggnog and stir in the milk. Mix gently to combine without overmixing.
  5. Chill the batter: Refrigerate the batter for at least one hour or up to overnight to allow the flour to hydrate and the batter to thicken slightly. Before cooking, stir gently and add a bit of milk if needed to achieve the consistency of heavy cream.
  6. Heat the pan: Warm a crepe pan or a 7-inch nonstick skillet over medium heat. Brush the surface lightly with melted butter to prevent sticking.
  7. Cook the crepes: Pour 3 to 4 tablespoons of batter into the pan, quickly tilting and swirling it to coat the bottom evenly in a thin layer.
  8. Flip the crepes: Cook for 1-2 minutes until edges start to lift. Loosen edges with a spatula, flip carefully, and cook the other side for 1 minute until lightly golden.
  9. Repeat and keep warm: Slide cooked crepes onto a plate and repeat the process with the remaining batter, brushing pan with butter between each crepe.
  10. Serve: Top the warm crepes with chilled eggnog sauce, sprinkle with powdered sugar, and garnish with fresh pomegranate arils for a festive presentation.

Notes

  • Use full-fat eggnog for richer flavor and creamier texture.
  • Refrigerating the batter helps develop better texture in the crepes.
  • If the batter thickens too much after refrigeration, add a splash of milk to loosen it before cooking.
  • Use a nonstick skillet or a dedicated crepe pan for best results when cooking delicate crepes.
  • Pomegranate arils add a juicy burst of color and tartness, but fresh berries can be substituted.
  • Serve crepes immediately after cooking to prevent them from becoming soggy.
