Ingredients
Vegetables
- 1 cup frozen mixed veggies (corn, peas, carrots, etc.)
- Green onions, chopped (optional)
Eggs & Rice
- 2 eggs, lightly beaten
- 2 cups cooked rice
Oils & Sauces
- 3 tbsp cooking oil, separated
- 3 tbsp soy sauce
- 1 tbsp sesame oil
Seasonings
- 5 cloves garlic, minced
- 1 tsp white pepper (and/or black pepper)
- Salt, to taste
Instructions
- Cook the vegetables: Heat 1 tablespoon of cooking oil in a large wok or nonstick skillet over medium-high heat. Add the frozen mixed veggies and stir-fry for about 2 minutes until they begin to soften but still retain some crunch.
- Scramble the eggs: Push the veggies to one side of the pan. Add a little more oil if needed, then pour in the beaten eggs on the cleared side. Scramble the eggs gently until fully cooked, then combine them with the vegetables in the pan.
- Add the rice: Add another tablespoon of oil to the pan. Stir in the cooked rice, breaking up any clumps with your spatula. Mix everything thoroughly so the rice is evenly combined with the eggs and veggies.
- Season and stir-fry: Add the minced garlic, soy sauce, sesame oil, white pepper, and salt to taste into the pan. Stir-fry all ingredients together for about 3 minutes. This allows flavors to blend and the rice to heat through completely.
- Garnish and serve: If using, sprinkle chopped green onions over the fried rice. Serve immediately while hot for the best taste and texture.
Notes
- You can use day-old cooked rice for better texture to avoid mushy fried rice.
- Feel free to add your preferred protein like chicken or shrimp for a heartier dish.
- Adjust soy sauce quantity to your taste and dietary sodium needs.
- Use a wok or large nonstick skillet for even cooking and easy stirring.
- For a spicier twist, add chopped chili or a dash of hot sauce while stir-frying.
