Ingredients
Ramen Noodles
- 1 pack or 3 oz dry instant ramen noodles (discard the seasoning packet)
Peanut Butter Sauce
- 2 tablespoons creamy peanut butter (unsweetened, natural)
- ½ tablespoon dark soy sauce
- ½ teaspoon garlic powder
- 1 tablespoon sriracha (or to taste)
- 1 tablespoon honey (or maple syrup)
- 1 teaspoon lemon juice
- salt (to taste)
- ½ teaspoon toasted sesame oil
- ¼ cup reserved warm noodles water
Garnishes
- 1 chopped green onion
- 1 tablespoon crushed toasted peanuts
- chopped fresh red chili (optional)
Instructions
- Cook the ramen noodles: Fill a pot with water and bring it to a boil. Discard the seasoning packet from the ramen noodles. Add the noodles to the boiling water and cook until al dente, following the package directions. Before draining, reserve ¼ cup of the warm noodles cooking water.
- Make the peanut butter sauce: In a large bowl, whisk together the creamy peanut butter, sriracha, dark soy sauce, garlic powder, honey, lemon juice, salt, toasted sesame oil, and the reserved ¼ cup warm noodles water until the sauce is smooth and well combined.
- Taste and adjust: Sample the peanut butter sauce and adjust the flavor to your preference by adding more sriracha for heat, honey for sweetness, or salt if needed.
- Mix in the noodles with the sauce: Add the drained ramen noodles into the bowl with the peanut butter sauce. Also add chopped green onions and crushed toasted peanuts. Toss everything thoroughly to ensure the noodles are evenly coated with the sauce.
- Garnish and serve: Serve the dressed noodles garnished with additional green onions, crushed peanuts, and if desired, chopped fresh red chili for an extra kick. Enjoy immediately while warm.
Notes
- You can substitute honey with maple syrup for a vegan version.
- Adjust sriracha quantity according to your preferred spice level.
- Using natural unsweetened peanut butter keeps the sauce rich but not too sweet.
- Reserve noodles water is important for thinning the sauce and helping it coat the noodles better.
- Add fresh vegetables like sliced cucumbers or shredded carrots for added crunch and nutrition.
