Ingredients
Shrimp and Seasoning
- 1 pound large shrimp (peeled and deveined)
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons olive oil (divided)
Sauce
- 1 medium onion (diced)
- 2 tablespoons garlic (minced)
- ½ cup heavy cream
- ¼ cup vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon paprika
Instructions
- Heat the skillet: Place a skillet on medium-high heat and add 1 tablespoon of olive oil to warm up.
- Sauté the shrimp: Add the peeled and deveined shrimp to the hot skillet and cook for 2 minutes. Flip the shrimp over and cook for another 2-3 minutes, until they turn opaque and are no longer pink.
- Set aside shrimp: Remove the cooked shrimp from the skillet, season them with salt and pepper, and set them aside on a plate.
- Prepare for sauce: Remove any remaining liquid from the skillet and add the remaining 1 tablespoon of olive oil to the pan.
- Sauté onion and garlic: Add the diced onion to the skillet and cook until soft and translucent, about 3-4 minutes. Then add the minced garlic and sauté for an additional minute until fragrant.
- Create the sauce: Stir in the heavy cream, vegetable broth, tomato paste, fresh chopped parsley, and paprika. Mix everything together until well combined.
- Simmer the sauce: Reduce the heat slightly and let the sauce simmer for about 5 minutes or until it thickens to your liking.
- Combine shrimp and sauce: Return the cooked shrimp to the skillet and gently toss them in the creamy sauce until fully coated.
- Serve: Serve the creamy garlic shrimp immediately over rice or pasta for a comforting and flavorful meal.
Notes
- You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less rich.
- Using fresh shrimp is recommended for the best flavor, but frozen can work if thawed properly.
- Adjust the paprika amount to control the spice and smoky flavor intensity.
- For a thicker sauce, simmer for a couple more minutes or add a slurry of cornstarch and water.
- This dish pairs excellently with linguine, fettuccine, or steamed rice.
