Description

Delicious and easy-to-make chocolate-coated peanut butter frozen yogurt bars that combine creamy Greek yogurt, rich peanut butter, and crunchy roasted peanuts, all dipped in smooth dark chocolate. Perfect for a healthy and refreshing treat with a nice balance of sweet and salty flavors.

Ingredients

Frozen Yogurt Bars

  • 1 cup Plain Greek yogurt
  • 2 Tbsp smooth peanut butter
  • ½ cup salted roasted peanuts, plus more for topping if desired
  • 1 Tbsp maple syrup

Chocolate Coating

  • 1 cup dark chocolate
  • 2 Tbsp coconut oil, melted
  • Flaky salt (optional)

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set aside to prevent sticking and facilitate easy removal of the yogurt bars.
  2. Mix yogurt base: In a bowl, combine the plain Greek yogurt, smooth peanut butter, and maple syrup. Mix thoroughly until smooth and well incorporated. Then gently fold in the salted roasted peanuts to add crunch.
  3. Form and freeze bars: Scoop the yogurt mixture onto the lined baking sheet in four heaping ¼ cup portions, leaving space between each. Flatten each portion into rounds and insert a popsicle stick into each round, fully covering the stick with yogurt mixture. Sprinkle additional peanuts on top if desired. Freeze these bars for at least 4 hours or until completely frozen.
  4. Melt chocolate coating: Melt the dark chocolate and coconut oil together in the microwave in 30-second increments, stirring after each until fully melted and smooth. Allow the mixture to cool slightly but not harden.
  5. Remove frozen bars: Take the frozen yogurt bars out of the freezer. Carefully lift them off the parchment paper using a spatula if needed to avoid breakage.
  6. Coat with chocolate: Spoon or drizzle the melted chocolate over the frozen bars, turning them to coat all sides thoroughly (or you can leave the bottom side uncoated if you prefer). The chocolate will harden instantly upon contact with the frozen yogurt. If the chocolate begins to melt or does not harden, place the coated bars back in the freezer for about 5 minutes. Sprinkle flaky sea salt over the bars if using.
  7. Serve and store: Enjoy the chocolate-coated frozen yogurt bars right away or store them in the freezer until ready to serve. When frozen, allow to thaw for about 10 minutes before eating for a soft, creamy texture.

Notes

  • Use salted peanuts for the best balance of sweet and salty flavors.
  • Ensure the chocolate mixture has cooled slightly before coating to prevent melting the yogurt bars.
  • For easier removal, use a thin spatula under each bar.
  • Allow thawing slightly before eating to enjoy a creamy texture instead of a hard frozen bar.
  • Flaky sea salt is optional but enhances the flavor contrast beautifully.
  • Store leftover bars in an airtight container in the freezer for up to 1 week.
