Description

Easy Chicken Tostadas are a quick and delicious meal perfect for busy weeknights, combining crispy baked corn tortillas topped with a flavorful mixture of chicken, black beans, corn, and salsa, finished with melted cheese and fresh toppings in just 20 minutes.

Ingredients

Tostadas

  • 8 corn tortillas (6 inch)
  • 1 tablespoon vegetable oil

Chicken Mixture

  • 1 1/2 cups shredded cooked chicken
  • 8 ounces salsa
  • 2 tablespoons taco seasoning (storebought or homemade)
  • 8.5 ounces corn, drained
  • 15 ounces black beans, drained and rinsed

Toppings

  • 2 cups Colby Jack cheese, shredded
  • Fresh cilantro, for garnish
  • Diced tomatoes, for garnish

Instructions

  1. Preheat Oven and Prepare Tortillas: Preheat your oven to 450°F (232°C). Lay the corn tortillas flat on a rimmed baking sheet. Brush both sides of each tortilla with vegetable oil, making sure each side is shiny but not oily with puddles. Place the tortillas in the oven and bake for 10 minutes total, flipping each tortilla halfway through and rotating the pan occasionally. Check every 2 to 3 minutes to avoid burning.
  2. Cook Chicken Mixture: While tortillas bake, heat a medium to large saucepan over medium heat. Add shredded cooked chicken, salsa, taco seasoning, drained corn, and rinsed black beans. Stir and cook for about 5 minutes, or until the mixture is heated through and well combined.
  3. Assemble Tostadas: Once tortillas and chicken mixture are ready, spoon approximately 1/2 cup of the chicken mixture onto each tortilla. Sprinkle about 1/4 cup of shredded Colby Jack cheese on top of each layered tostada.
  4. Melt Cheese: Return the assembled tostadas to the oven and bake for an additional 5 minutes, or until the cheese is completely melted and bubbly.
  5. Garnish and Serve: Remove from oven and top each tostada with fresh cilantro and diced tomatoes for a fresh, vibrant finish. Serve immediately while hot.

Notes

  • Use cooked shredded chicken for convenience—rotisserie chicken works well.
  • If using flour tortillas, reduce baking time as they cook faster.
  • Check tortillas frequently while baking as oven temperatures vary to prevent burning.
  • Adjust taco seasoning amount to your spice preference.
  • Feel free to add avocado, sour cream, or hot sauce as additional toppings.
