Description

This Easy Chicken Souvlaki recipe features tender chicken thighs marinated in a flavorful blend of Greek yogurt, lemon, garlic, and oregano. Perfectly grilled or air-fried for a quick and delicious Mediterranean meal, it pairs wonderfully with traditional sides like tzatziki, fresh vegetables, and flatbreads.

Ingredients

Chicken and Marinade

  • 1 kg Chicken thighs, cut into chunks
  • 150 g Greek yoghurt
  • 2 tsp Dried oregano
  • 1 Lemon, zest and juice
  • 4 Garlic cloves, crushed
  • 2 tbsp Olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

To Serve

  • Tzatziki sauce
  • Red onion, sliced
  • Cucumber, sliced
  • Tomatoes, sliced
  • Flatbreads

Instructions

  1. Prepare the Marinade: In a large bowl, mix the Greek yoghurt, dried oregano, lemon zest and juice, crushed garlic, olive oil, sea salt, and freshly ground black pepper to create a flavorful marinade.
  2. Marinate the Chicken: Add the chicken thigh chunks to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for up to 12 hours to allow the flavors to meld and tenderize the meat.
  3. Thread the Chicken: Remove the chicken from the marinade and thread the pieces onto 8 skewers evenly, preparing them for cooking.
  4. Cook Under the Grill or BBQ: Preheat the grill to high heat. Place the skewers on a foil-lined tray and cook for 10-15 minutes, turning occasionally to ensure the chicken is cooked evenly and thoroughly.
  5. Alternative Cooking Method - Air Fryer or Oven: Preheat your air fryer or oven to 200°C (400°F). Cook the skewers for 20-30 minutes until the chicken is cooked through and juices run clear.
  6. Serve: Arrange the cooked chicken souvlaki with tzatziki, sliced red onion, cucumber, tomatoes, and flatbreads for a delightful Mediterranean meal.

Notes

  • Marinating the chicken overnight enhances the flavor and tenderness.
  • Use metal or soaked wooden skewers to prevent burning during cooking.
  • Ensure chicken is cooked to an internal temperature of 75°C (165°F) for safety.
  • Adjust seasoning to taste before serving.
  • Serve with fresh lemon wedges for added zest.
