Description

This easy and flavorful Chicken Fajitas recipe combines juicy, seasoned chicken breasts with sautéed bell peppers and onions. Served with warm tortillas and classic toppings like sour cream, pico de gallo, and avocado, this dish makes for a quick and satisfying Tex-Mex meal perfect for weeknight dinners.

Ingredients

Protein

  • 3 boneless skinless chicken breasts

Vegetables

  • 1 onion (thinly sliced)
  • 3 bell peppers (thinly sliced)
  • ½ lime
  • avocado (for serving)

Fajita Seasoning

  • ½ tablespoon chili powder
  • ½ tablespoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Other Ingredients

  • 2 tablespoons olive oil
  • tortillas (for serving)
  • sour cream (for serving)
  • pico de gallo (for serving)

Instructions

  1. Make fajita seasoning: In a small mixing bowl, combine chili powder, ground cumin, garlic powder, paprika, oregano, kosher salt, and black pepper. Stir them together thoroughly to create the fajita seasoning blend.
  2. Season the chicken: Generously sprinkle the fajita seasoning on both sides of each chicken breast. Use your fingers to press the seasoning into the meat to ensure it adheres well.
  3. Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken breasts and sear them, cooking for about 7 to 8 minutes on each side until fully cooked and browned on the outside.
  4. Prepare the vegetables: While the chicken is cooking, thinly slice the onion and bell peppers into strips.
  5. Sauté the vegetables: After removing the chicken from the skillet, let it rest on a plate for a few minutes. Add the sliced bell peppers and onion to the same skillet and sauté over medium heat for 4 to 5 minutes, stirring frequently until the vegetables are tender-crisp.
  6. Slice the chicken: When the vegetables are nearly done, slice the rested chicken breasts into strips. For thinner pieces, cut the strips in half lengthwise if desired.
  7. Combine and finish: Return the sliced chicken to the skillet with the sautéed vegetables. Squeeze fresh lime juice over the mixture and stir everything together to combine and heat through.
  8. Serve: Serve the chicken and vegetable mixture immediately with warm tortillas and optional toppings such as sour cream, pico de gallo, and sliced avocado.

Notes

  • For extra flavor, marinate the chicken with the seasoning for 30 minutes before cooking.
  • Use any color bell peppers you prefer or have on hand.
  • To make it spicier, add a pinch of cayenne pepper or some sliced jalapeños.
  • Serve with your favorite cheese or fresh cilantro for added taste.
  • Leftover fajita mixture can be refrigerated for up to 3 days and reheated.
