Description

This luxurious Dubai Chocolate Filling recipe features a delightful combination of crispy kunafa pastry strands mixed with a rich and creamy pistachio-tahini blend. Perfect for adding texture and flavor to desserts, this filling balances nutty, sweet, and buttery flavors with a satisfying crunch.

Ingredients

Kunafa Crunch

  • 100g kunafa pastry (kataifi), thawed
  • 30g unsalted butter, melted

Cream Mixture

  • 150g pistachio paste (unsweetened)
  • 80g tahini
  • 50g powdered sugar (adjust to taste)

Instructions

  1. Prepare the Kunafa Crunch: Preheat your oven to 160°C (320°F). Gently pull apart the thawed kunafa pastry strands by hand to separate them evenly into small pieces.
  2. Coat the Kunafa: Place the separated kunafa pieces in a large mixing bowl. Pour the melted unsalted butter over them and toss thoroughly to ensure every strand is well coated for even baking.
  3. Bake the Kunafa: Spread the butter-coated kunafa in a thin, even layer on a baking tray lined with parchment paper. Bake in the preheated oven for 15 to 20 minutes, stirring every 5 minutes to ensure uniform browning. Bake until the kunafa turns golden brown and crispy. Remove from oven and let cool completely to retain its crunch.
  4. Mix the Cream: In a separate bowl, combine the unsweetened pistachio paste, tahini, and powdered sugar. Stir using a spatula or whisk until you achieve a smooth and fully blended cream mixture.
  5. Combine the Mixtures: Once the kunafa crunch has cooled, fold it gently into the pistachio-tahini cream mixture. Mix carefully until the kunafa is evenly distributed, resulting in a thick, creamy, and textured filling ready to be used in your desserts.

Notes

  • Ensure the kunafa pastry is thawed completely before separating to avoid clumping or tearing.
  • Adjust the amount of powdered sugar based on your preferred sweetness level.
  • Stirring the kunafa while baking prevents burning and promotes even crispness.
  • This filling works excellently in cakes, pastries, or as a layer in traditional Middle Eastern desserts.
  • Store any leftover filling in an airtight container in the refrigerator for up to 3 days.
