Description

This Dr Pepper sheet cake is a moist, rich chocolate cake infused with the unique flavor of Dr Pepper soda in both the cake and the glaze. Made from scratch with a perfect balance of cocoa and sweet soda, it’s an irresistible treat for fans of this iconic beverage and chocolate lovers alike.

Ingredients

Cake

  • 2 cups sugar
  • 1 3/4 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup Dr. Pepper®
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Glaze

  • 1/4 cup butter
  • 1 tablespoon unsweetened cocoa powder
  • 5 tablespoons Dr. Pepper®, divided
  • 2 1/4 cups powdered sugar

Instructions

  1. Preheat and prepare pan: Gather all ingredients and preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan thoroughly to prevent sticking.
  2. Mix dry ingredients: In a large bowl, stir together sugar, all purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add wet ingredients: Add eggs, Dr. Pepper, milk, vegetable oil, and vanilla extract to the dry mixture. Beat using an electric mixer on medium speed for 2 minutes to create a smooth batter.
  4. Incorporate boiling water: Carefully stir in the boiling water into the batter. The batter will be thin, which is expected for a moist cake.
  5. Bake the cake: Pour the batter into the prepared baking pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool cake: Remove the cake from the oven and allow it to cool in the pan on a wire rack for at least 30 minutes. The cake should be cooled enough before glazing.
  7. Make the glaze: In a medium saucepan, combine butter, cocoa powder, and 3 tablespoons of Dr. Pepper. Cook and stir over medium-high heat until the mixture comes to a boil.
  8. Finish the glaze: Remove the saucepan from heat and whisk in powdered sugar until the glaze is smooth and creamy, about 2 minutes. Stir in the remaining 2 tablespoons of Dr. Pepper to achieve a smooth glaze consistency.
  9. Glaze the cake: Pour the prepared glaze evenly over the cooled cake, spreading if necessary to cover the entire top.
  10. Set and serve: Allow the glaze to set by letting the cake stand for 1 hour before serving to achieve the best texture and flavor.

Notes

  • Ensure the boiling water is added carefully to avoid splashing and to maintain cake batter consistency.
  • For an even moister cake, measure ingredients accurately and do not overbake.
  • Store any leftover cake covered at room temperature for up to 3 days or refrigerate for longer freshness.
  • Using full-fat milk and vegetable oil contributes to the cake’s moist texture.
  • This cake pairs wonderfully with a scoop of vanilla ice cream for extra indulgence.
