Description

Divorce Me Chicken is a flavorful and easy-to-make baked chicken dish featuring a spicy, garlicky, and tangy marinade. Perfect for a quick weeknight dinner, this recipe uses simple ingredients like olive oil, honey, chili flakes, and lemon to create a succulent and tender meal that is sure to impress.

Ingredients

Chicken

  • 4 Chicken breasts

Marinade

  • 4 tbsp Olive oil
  • 2 tbsp Honey
  • 2 tsp Chilli flakes
  • 2 tsp Garlic granules
  • 2 tsp Paprika
  • 1 Lemon (Zest and juice)
  • Sea salt and freshly ground black pepper, to taste

To Serve

  • Lemon wedges
  • Extra chilli flakes

Instructions

  1. Make the sauce: Mix all of the marinade ingredients including olive oil, honey, chili flakes, garlic granules, paprika, lemon zest and juice, and a good pinch of salt and pepper in a large bowl. Take 2 tablespoons of this marinade mixture and place it in a small separate bowl to the side. This reserved marinade will be used later as a glaze.
  2. Leave to marinate: Add the chicken breasts to the large bowl containing the marinade and thoroughly coat them. Cover and leave the chicken to marinate in the fridge for as long as possible, up to 12 hours. Ensure the chicken is seasoned well with salt and pepper during this step.
  3. Preheat and bake: When ready to cook, preheat your oven to 180°C fan (200°C conventional / 400°F / Gas Mark 6). Place the marinated chicken breasts in a baking dish and bake for 20-25 minutes or until the chicken is cooked through and no longer pink inside.
  4. Optional glaze and grill: If desired, spoon over the saved marinade glaze onto the baked chicken. Preheat the grill to high and place the baking dish under the grill for 3-5 minutes until the chicken browns slightly on top. Make sure your baking dish is grill safe before this step.
  5. Serve: Once cooked and glazed, scatter extra chili flakes over the chicken and serve with lemon wedges for squeezing. Enjoy the vibrant, spicy flavors of this delicious chicken dish.

Notes

  • The marinade can be prepared ahead and the chicken left to marinate for up to 12 hours for best flavor.
  • The grilling step to brown the chicken is optional but adds a nice finishing touch.
  • Ensure your baking dish is safe to go under the grill if glazing and grilling.
  • Adjust chili flakes to your heat preference.
  • Serve with a fresh salad, steamed vegetables, or rice for a complete meal.
