Ingredients
Soup Base
- 3 tablespoons salted butter
- 1 medium yellow onion, diced
- 3 ribs celery, diced
- 1 medium carrot, finely diced
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
Main Ingredients
- 3 medium Yukon gold potatoes (about 1 pound), scrubbed and diced
- 1 ¼ cups finely diced dill pickles
- ½ teaspoon dried dill
Finishing Ingredients
- 1 teaspoon cornstarch (optional)
- ⅔ cup sour cream, plus additional for garnish
- 2 tablespoons fresh dill, for garnish (optional)
Instructions
- Sauté Vegetables: In a large soup pot, melt the butter over medium heat. Add the diced onion, celery, and carrot, cooking until the onion begins to soften and the vegetables are fragrant. Sprinkle the flour over the vegetables and cook for an additional minute to form a thickened base.
- Prepare Potatoes: While sautéing, scrub and dice the Yukon gold potatoes into bite-sized pieces to ensure even cooking once added to the soup.
- Simmer Soup: Add the chicken broth, diced potatoes, finely diced dill pickles, and dried dill to the soup pot. Bring the mixture to a boil, then reduce to a low simmer. Cover the pot and allow the soup to cook for 30 minutes or until the vegetables are tender and flavors meld.
- Thicken Soup: Remove the lid and use a potato masher to mash some of the potatoes directly in the pot, thickening the soup to your desired consistency. Stir in the sour cream, mixing it well into the hot soup. Let it simmer uncovered for an additional 3 to 5 minutes to warm through and combine flavors. If a thicker consistency is desired, dissolve the optional cornstarch in a small amount of cold water and stir it in during this time.
- Garnish and Serve: Serve the soup hot, garnished with a dollop of sour cream and fresh dill if desired, adding a bright herbal finish to each bowl.
Notes
- The use of Yukon gold potatoes helps to create a creamy texture while still holding their shape when partially mashed.
- The dill pickles provide a distinctive tang and crunch; choose quality pickles with dill seasoning for the best flavor.
- If you prefer a vegetarian version, substitute the chicken broth with vegetable broth.
- Cornstarch is optional and can be used to achieve a thicker texture if needed.
- Fresh dill garnish adds a fresh, aromatic note but is optional depending on availability or preference.
