Description

Delicious and creamy Deviled Potatoes made with tender baby potatoes scooped out and filled with a smooth, flavorful mixture of avocado oil mayo, mustard, pickles, and fresh chives. Perfect as a tasty appetizer or side dish, these deviled potatoes are easy to prepare and can be served chilled or at room temperature.

Ingredients

Potatoes

  • 1½ lbs baby potatoes

Filling

  • ½ cup Chosen Foods Avocado Oil Mayo (vegan mayo)
  • 1 tbsp mustard
  • 1 pickle, finely diced
  • ¼ cup chives, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp paprika

Instructions

  1. Boil Potatoes: In a stock pot, add the baby potatoes and cover them with water. Add 1 teaspoon of salt to the water. Bring to a boil and cook the potatoes until they are fork tender, about 18 minutes. Drain the water completely.
  2. Prepare Potato Skins: Once potatoes are cool enough to handle, slice each potato lengthwise. Using a small spoon or melon baller, carefully scoop out the insides, leaving a thin layer of potato around the edges to form a shell. Transfer the scooped potato flesh into a large bowl and set the skins aside.
  3. Make Filling: To the bowl with the potato flesh, add avocado oil mayo, mustard, finely diced pickle, chopped chives, salt, and black pepper. Mash the mixture thoroughly with a fork until smooth and well combined. This will be your filling.
  4. Fill Potato Skins: For a cleaner presentation, transfer the filling to a food processor and blitz for 5 to 10 seconds to achieve an even smoother texture. Then place the filling into a piping bag fitted with the largest piping tip. Carefully pipe the filling back into the potato skins. If you don’t have a piping bag, spoon the filling in gently.
  5. Garnish and Serve: Sprinkle the filled potatoes with paprika and additional chopped chives to garnish. Store the deviled potatoes in the refrigerator for up to 3 days before serving.

Notes

  • Use baby potatoes that are firm and unblemished for the best results.
  • The avocado oil mayo contributes a creamy texture and a subtle avocado flavor, but regular or vegan mayo can be used as a substitute.
  • If you don’t have a piping bag, a small spoon works well to fill the potatoes.
  • The deviled potatoes can be prepared ahead and refrigerated, making them ideal for parties and gatherings.
  • Adjust seasoning according to taste preferences, especially the salt and mustard.
