Description

These Dark Chocolate and Sea Salt Nut Bars offer a perfect balance of rich dark chocolate, crunchy toasted nuts, and a touch of sea salt for a delightful sweet and salty snack. Made with a blend of cashews, peanuts, and almonds combined with puffed rice and bound together by brown rice syrup, these bars are easy to prepare and perfect for a healthy treat or energy boost.

Ingredients

Nuts and Dry Ingredients

  • 3/4 cup cashews
  • 3/4 cup peanuts
  • 1 cup almonds
  • 1/2 cup puffed rice

Binding and Flavoring

  • 1/4 cup brown rice syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt

Chocolate Coating

  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional: flaky salt for topping

Instructions

  1. Preheat Oven: Preheat your oven to 325˚F (160˚C) to prepare for toasting the nuts.
  2. Toast Nuts: Spread the cashews, peanuts, and almonds evenly on a rimmed baking sheet and bake for 5-8 minutes until they are fragrant and lightly browned, enhancing their flavor and crunch.
  3. Prepare Pan: Line an 8x8-inch baking pan with parchment paper to ensure easy removal of the nut bars later.
  4. Combine Dry Ingredients: In a large mixing bowl, combine the toasted nuts and puffed rice, tossing them together to mix evenly.
  5. Mix Syrup and Flavor: Warm the brown rice syrup in a microwave-safe bowl for 30 seconds to loosen it. Whisk in vanilla extract and sea salt until fully incorporated, then pour this mixture over the nut and puffed rice blend, stirring until coated evenly.
  6. Form the Bars: Transfer the coated mixture into the prepared baking pan and firmly press it into an even layer to ensure the bars hold together.
  7. Bake Bars: Bake the pressed mixture for 18-20 minutes, then remove and allow it to cool for approximately 30 minutes. Once cooled, transfer to a cutting board and cut into thin bars by halving lengthwise and then slicing each half into 5-6 bars. Let the bars cool completely.
  8. Melt Chocolate: Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each session until the chocolate is fully melted and smooth.
  9. Coat Bars in Chocolate: Dip the bottom of each nut bar into the melted chocolate, then place on a parchment-lined baking sheet. Drizzle the remaining melted chocolate over the top of each bar and sprinkle with flaky salt if desired.
  10. Set Chocolate: Refrigerate the chocolate-coated bars until the chocolate hardens and sets completely, then enjoy your delicious nut bars.

Notes

  • Use your favorite mix of unsalted nuts such as walnuts, pecans, or hazelnuts as a substitute.
  • Ensure to press the nut mixture firmly in the pan to help the bars hold together when cut.
  • Store bars in an airtight container in the refrigerator for up to one week.
  • For a vegan version, check that the brown rice syrup and chocolate chips are vegan-friendly.
  • Microwaving the syrup helps make it more workable and evenly distributes the vanilla and salt flavoring.
