Soft, moist, and topped with a luscious buttery glaze, these cookies are perfect for any occasion and bring a delicious Southern twist to your cookie jar.

Ingredients

Cookie Dough

  • 1 stick butter, softened (8 tbsp or 1/2 cup)
  • 1/3 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Butter Sauce Glaze

  • 2 tbsp butter
  • 1/4 cup powdered sugar
  • 2 tsp water
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and set it aside for later.
  2. Cream Butter and Sugars: In a stand mixer, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This forms the base of your cookie dough and ensures sweetness and moisture.
  3. Add Egg and Vanilla: Add the egg and vanilla extract to the creamed butter mixture, mixing well until fully incorporated. This adds flavor and binds the dough.
  4. Mix in Dry Ingredients: Into the wet mixture, add the all-purpose flour, baking powder, and salt. Mix until the flour is fully combined and disappears into the dough, creating a soft cookie batter.
  5. Shape Cookies: Using a medium cookie scoop, portion out 6 equal-sized dough balls. Roll each ball gently between your palms to smooth them out. Place them spaced on the prepared baking sheet and gently press each to about 2 cm thick to help them bake evenly.
  6. Bake Cookies: Bake the cookies in the preheated oven for 10 minutes or until they are lightly golden around the edges but still soft in the center.
  7. Make Butter Sauce Glaze: While the cookies bake, combine the butter, powdered sugar, water, and vanilla extract in a small saucepan. Melt over medium-low heat, stirring continuously to dissolve the sugar completely without boiling the mixture.
  8. Thicken Glaze: Remove the pan from heat and allow the butter sauce to rest for about 5 minutes. This rest time thickens the glaze slightly, making it perfect for brushing.
  9. Glaze Cookies: Once the cookies come out of the oven and are still warm, use a pastry brush to gently coat them with the buttery glaze. Allow the glaze to set slightly, then sprinkle a light dusting of powdered sugar over the top for extra sweetness and presentation.
  10. Serve and Enjoy: Let the cookies cool a little before serving. Enjoy these delectable Kentucky Butter Cake Cookies with their rich butter glaze and soft melt-in-your-mouth texture.
