Ingredients
Blackberry Syrup
- 1 pint fresh blackberries
- 1 cup granulated sugar
- 1/2 cup water
- 2 tablespoons cornstarch
Croissant French Toast
- 8 croissants (round-shaped preferred)
- 1/4 cup half-and-half
- 2 tablespoons granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 5 large eggs
- Butter, for frying and serving
Toppings (optional)
- Warm maple syrup
- Fresh strawberries
- Whipped cream
Instructions
- Prepare the blackberry syrup: In a saucepan over medium heat, combine the fresh blackberries, granulated sugar, and water. Bring to a gentle boil, then reduce heat and simmer for 5 minutes. Whisk in the cornstarch, mashing larger berries to release their juice, and cook until syrup thickens. Remove from heat and set aside.
- Preheat the oven: Set your oven to 200 degrees Fahrenheit to keep the cooked French toast warm later.
- Slice croissants: Cut the croissants lengthwise in half, preparing them for soaking and cooking.
- Make the custard dip: In a large bowl, whisk together half-and-half, granulated sugar, vanilla extract, ground cinnamon, and eggs until fully combined.
- Dip croissants: Submerge each croissant half into the custard mixture, ensuring they are well coated but not overly soaked.
- Cook croissants: Melt a small amount of butter in a large non-stick skillet over low heat. Place the dipped croissant halves cut-side-down in the skillet, then turn heat to medium-low. Cook until golden brown on the bottom, about 3 to 4 minutes, gently moving them to prevent burning.
- Flip and continue cooking: Turn the croissants over and cook the other side for an additional 2 minutes. As you finish each batch, transfer the cooked croissants to the oven to keep warm.
- Serve with toppings: Spread butter on the bottom halves, drizzle with blackberry syrup and warm maple syrup, add fresh strawberries and whipped cream as desired, then close with the top halves. Serve immediately and enjoy.
Notes
- Round-shaped croissants are preferred for even cooking and easy assembling.
- Keep the cooked French toast warm in a low-temperature oven to maintain crispness and warmth before serving.
- The blackberry syrup can be made ahead and refrigerated; warm slightly before serving.
- Adjust cinnamon and vanilla to taste for a more or less intense flavor.
- Use a non-stick skillet and keep heat moderate to avoid burning the custard-soaked croissants.
