Description

This Crockpot Lemon Garlic Chicken and Rice is a comforting and flavorful one-pot meal featuring tender chicken breasts slow-cooked with aromatic garlic, herbs, and lemon, combined with fluffy basmati rice and vibrant broccoli. Finished with tangy feta cheese and fresh parsley, this dish offers a perfect balance of zesty, savory, and fresh flavors, making it an effortless dinner for the whole family.

Ingredients

Protein and Seasonings

  • 1 lb boneless skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper

Rice and Broth Mixture

  • 1 cup long grain basmati rice
  • 1.5 cup low sodium chicken broth
  • 4 cloves garlic (smashed)
  • 1 medium yellow onion (diced)
  • 1 tbsp dried oregano
  • 1 tbsp dried basil

Produce and Cheese

  • 1 whole lemon (both the juice and zest)
  • 2 cups broccoli (cut into florets)
  • 1 cup feta cheese (crumbled)
  • 1 bunch of parsley (about 1 cup, chopped)

Instructions

  1. Season Chicken: Season the boneless skinless chicken breasts evenly with salt and black pepper, then set aside to allow the flavors to develop.
  2. Prepare Base Mixture: In your crockpot, combine the long grain basmati rice, low sodium chicken broth, diced yellow onion, smashed garlic cloves, dried oregano, and dried basil. Stir these ingredients well to create a flavorful base.
  3. Add Chicken and Lemon Juice: Place the seasoned chicken breasts on top of the rice mixture in the crockpot. Drizzle the juice from half of the lemon over the chicken to infuse a fresh citrus flavor. Close the lid securely.
  4. Cook Chicken and Rice: Cook the mixture on HIGH for about 2 hours, or alternatively on LOW for 4 to 6 hours, until the chicken is tender and the rice is fully cooked.
  5. Add Broccoli: After 1 hour and 30 minutes of cooking on HIGH (or the last 30 minutes if cooking on LOW), open the crockpot and add the broccoli florets. Close the lid and continue cooking for the remaining 30 minutes.
  6. Finish and Serve: Once cooking is complete, carefully remove the chicken breasts from the crockpot and slice them into bite-sized pieces. Return the chicken to the crockpot and add the remaining lemon juice, lemon zest, crumbled feta cheese, and chopped parsley. Stir everything gently to combine and serve warm.

Notes

  • For a creamier texture, you can add a splash of cream or Greek yogurt just before serving.
  • If you prefer a stronger lemon flavor, add more lemon zest or an extra squeeze of lemon juice.
  • Ensure the broccoli is added later in cooking to retain its bright color and slight crunch.
  • This dish can be made in advance and reheated gently on the stovetop or in the microwave.
  • Use low sodium chicken broth to better control the salt level in the dish.
