Ingredients
Main Ingredients
- 1.5-2 pounds lean ground beef
- 1 tablespoon Italian seasoning (divided)
- Salt and pepper (to taste)
- 1 medium onion, diced
- 4-5 garlic cloves, minced
- 4-5 cups beef broth (or more as needed for desired soup thickness)
- 24 ounce jar pasta sauce
- 3 tablespoons tomato paste
- 12 ounce lasagna noodles
Toppings
- 1 cup ricotta cheese
- 1 cup freshly shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- Fresh chopped parsley or basil (for garnish)
Instructions
- Brown the ground beef: Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon or spatula. Season with 1½ teaspoons Italian seasoning, salt, and pepper. Cook until browned with a slight pink center. Drain fat if necessary.
- Sauté onions and garlic: Add diced onions and minced garlic to the skillet with the beef. Cook for a few minutes until onions soften and become translucent. Transfer everything to the slow cooker.
- Add liquids and seasonings: Pour beef broth, pasta sauce, tomato paste, and the remaining Italian seasoning into the slow cooker. Stir well to combine.
- Slow cook the soup: Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours. The beef is pre-cooked, so this allows flavors to meld. You may also cook on low for up to 6 hours if needed.
- Add lasagna noodles: Break noodles into bite-sized pieces and stir into the slow cooker. Cover and continue cooking for about 30 minutes, until noodles are tender.
- Serve and garnish: Ladle soup into bowls. Top with dollops of ricotta, shredded mozzarella, Parmesan cheese, and fresh parsley or basil. Adjust seasoning with salt, pepper, or red pepper flakes as desired. Serve with garlic or crusty bread for dipping.
Notes
- Use lean ground beef to reduce excess fat and grease.
- Adjust beef broth quantity to make the soup thinner or thicker according to preference.
- For a vegetarian version, substitute ground beef with textured vegetable protein or mushrooms.
- Leftovers store well and flavors deepen after a day.
- Garlic bread or crusty bread complements this soup perfectly for a complete meal.
