Ingredients
Corned Beef and Vegetables
- 2 lbs lean corned beef brisket (fat trimmed)
- 1 cup frozen pearl onions
- 2 medium carrots, peeled and cut into chunks
- 2 medium parsnips, peeled and cut into chunks
- 1 small head cabbage, cut into 6 wedges
- 1/4 cup chopped fresh parsley
- 2 bay leaves
- 1/8 tsp whole peppercorns (or spice mix if it comes with one)
- 3 cups water
Instructions
- Prepare ingredients: Gather all ingredients, trimming fat from the brisket and peeling and cutting carrots and parsnips into chunks. Cut the cabbage into 6 wedges.
- Start cooking in crock pot: Place the brisket, carrots, parsnips, pearl onions, parsley, bay leaves, peppercorns, and 3 cups of water into a 5-6 quart crock pot. Cover with the lid.
- Cook on high for 4 hours: Let the ingredients cook on the high setting of the crock pot for 4 hours allowing the beef and root vegetables to become tender and flavors to meld.
- Add cabbage: After the initial 4 hours, add the cabbage wedges to the crock pot, re-cover it, and continue cooking on high for an additional 1 hour and 20 minutes.
- Rest and slice meat: Remove the corned beef from the crock pot and let it rest for 5 minutes. Slice the meat against the grain into desired serving portions.
- Serve: Serve the sliced corned beef with the cooked vegetables alongside cauliflower puree or buttermilk mashed potatoes for a complete meal. Enjoy!
