Description

This easy Crock-Pot Chicken Tacos recipe lets you slow cook tender, flavorful chicken seasoned with homemade or store-bought taco seasoning, combined with diced tomatoes and green chiles for a deliciously saucy filling. Perfect for busy days, simply shred the chicken right in the slow cooker and serve with your favorite tortillas and toppings for a satisfying Mexican-inspired meal.

Ingredients

Chicken and Seasoning

  • 3 pounds boneless skinless chicken breasts
  • 3 heaping tablespoons Homemade Taco Seasoning Mix (or store-bought)
  • ¾ cup diced onion

Tomato and Chile Mixture

  • 14.5 ounce can diced tomatoes (regular, fire-roasted, or fire-roasted garlic tomatoes, undrained)
  • 4.5 ounce can diced green chiles (undrained)
  • ½ cup chopped cilantro (optional)

For Serving

  • Tortillas (corn or flour)
  • Vegetable oil (if frying tortillas)
  • Toppings like cheese, sour cream, tomatoes, lettuce, avocado, hot sauce, etc.

Instructions

  1. Prepare the Slow Cooker: Place the chicken breasts in the bottom of the slow cooker insert. Evenly sprinkle the taco seasoning over the chicken. Add the diced onion, then pour the undrained diced tomatoes over the top. Finally, top with the undrained diced green chiles. Do not stir the ingredients.
  2. Cook the Chicken: Cover the slow cooker and cook on LOW for 6 to 8 hours or HIGH for 4 to 5 hours, until the chicken is tender and fully cooked.
  3. Shred the Chicken: Remove the lid and shred the chicken directly in the slow cooker using two forks. Add chopped cilantro if desired, and mix to combine for flavor.
  4. Serve: Spoon the shredded chicken mixture onto warmed tortillas or in burrito bowls. Add your favorite toppings such as cheese, sour cream, lettuce, and avocado. This filling is also great for enchiladas and nachos.

Notes

  • Use fire-roasted tomatoes for a smokier flavor.
  • Homemade taco seasoning allows you to control the salt and spice levels.
  • Shredding the chicken right in the slow cooker saves cleanup.
  • If you prefer, heat tortillas with a little vegetable oil in a skillet for crispier shells.
  • Leftovers keep well in the fridge for up to 3 days and freeze nicely for up to 2 months.
