Description

These Crispy Miso Chickpea Bowls with Garlic Sesame Dressing offer a flavorful, nutritious meal featuring crispy baked chickpeas coated in miso and chili garlic sauce, served over your choice of grains or cauliflower rice, and topped with fresh vegetables and a vibrant garlic sesame dressing.

Ingredients

Main Ingredients

  • 2 cups cooked brown rice, rice noodles, quinoa, or cauliflower rice
  • 1 (15-ounce) can chickpeas, rinsed, well drained, and towel dried
  • 2 Tbsp toasted or untoasted sesame oil (if oil-free, you can try omitting or adding more maple syrup as needed)
  • 1 Tbsp white or yellow miso paste (ensure vegan friendly — preferred Miso Master brand chickpea miso)
  • 2 tsp maple syrup
  • 1 tsp chili garlic sauce or 1/2 tsp red pepper flake (adjust to preferred heat level)

Dressing Ingredients

  • 1 Tbsp maple syrup (plus more to taste)
  • 1 Tbsp coconut aminos (or sub tamari or soy sauce if not gluten-free)
  • 2 Tbsp lime juice
  • 4 Tbsp rice vinegar (or sub white or apple cider vinegar — results may vary)
  • 1 ½ Tbsp sesame oil (if oil-free omit)
  • 4 cloves garlic, minced (optional; 4 cloves yield ~2 Tbsp)

Toppings and Garnishes

  • 1 ½ cups thinly sliced vegetables (such as red or green cabbage, bell pepper, cucumber, or carrots)
  • 1/4 cup finely chopped roasted salted peanuts or cashews (optional)
  • Quick Ginger Garlic Miso Tahini Dressing (optional)

Instructions

  1. Prepare Grains: If serving with grains, cook your choice of brown rice, rice noodles, quinoa, or cauliflower rice according to package instructions or preferred method.
  2. Preheat Oven and Dry Chickpeas: Preheat your oven to 425°F (218°C). Rinse and drain the chickpeas thoroughly, then pat them very dry with a towel to ensure they crisp up during baking.
  3. Make Chickpea Coating: In a medium mixing bowl, whisk together the sesame oil, miso paste, maple syrup, and chili garlic sauce or red pepper flakes. Add the dried chickpeas and toss well to coat evenly with the mixture.
  4. Bake Chickpeas: Spread the coated chickpeas in a single layer on a parchment-lined baking sheet. You may use additional sheets if necessary. Bake for 20-25 minutes, stirring or tossing halfway through to ensure even crisping. The chickpeas are ready when golden brown and crispy. Remove and set aside.
  5. Prepare Dressing: In a small bowl, whisk together chili garlic paste or red pepper flakes, maple syrup, coconut aminos or tamari, lime juice, rice vinegar, sesame oil, and minced garlic (if using). Taste and adjust seasoning, adding more acidity, saltiness, sweetness, or heat as desired to achieve a vibrant flavor.
  6. Prepare Vegetables and Toppings: Thinly slice your choice of vegetables such as cabbage, bell pepper, cucumber, or carrots. Finely chop peanuts or cashews if using. Set aside.
  7. Assemble Bowls: Divide cooked grains or cauliflower rice between serving bowls. Top with the crispy baked chickpeas, sliced vegetables, and drizzle generously with the garlic sesame dressing. Optionally, add Quick Ginger Garlic Miso Tahini Dressing for an extra layer of flavor.
  8. Store Leftovers: Store any leftovers covered in the refrigerator for up to 3 days. Keep dressings separate from the bowls to maintain crispness. This recipe is not freezer friendly.

Notes

  • Ensure chickpeas are thoroughly dried before baking to achieve maximum crispness.
  • You can swap coconut aminos with tamari or soy sauce if not gluten-free.
  • Adjust the amount of chili garlic sauce or red pepper flakes to suit your preferred heat level.
  • For an oil-free option, omit sesame oil and increase maple syrup slightly to maintain flavor balance.
  • Use parchment paper on the baking sheet to prevent sticking and make cleanup easier.
  • Leftover chickpeas are best enjoyed within 3 days and stored separately from dressings.
  • Add the Quick Ginger Garlic Miso Tahini Dressing for an added creamy, umami-rich dimension.
