Description

This Crispy Funnel Cakes recipe delivers light, golden, and delightfully crispy cakes that are perfect for a fun treat or festive occasion. Made with simple ingredients like eggs, flour, milk, and sugar, these funnel cakes are deep-fried to perfection and topped with a generous dusting of confectioner's sugar for a sweet, irresistible finish.

Ingredients

Funnel Cake Batter

  • 2 eggs
  • 2 tablespoons sugar
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Frying

  • Vegetable oil (for frying), about 1 inch deep

Topping

  • 1 cup confectioner’s sugar for sprinkling on top

Instructions

  1. Preheat the Oil: Pour vegetable oil into a large, thick-bottomed skillet to a depth of about one inch. Place the pan over medium-high heat and allow the oil to heat while you prepare the batter.
  2. Make the Batter: In a large mixing bowl, combine the eggs, sugar, milk, all-purpose flour, baking powder, and salt. Using an electric mixer, beat the mixture until it becomes smooth and well blended, making sure to scrape down the sides of the bowl as needed to incorporate all ingredients.
  3. Test the Oil Temperature: Sprinkle a tiny pinch of flour into the hot oil. If it sizzles immediately, the oil is at the proper temperature. Lower the heat to medium to maintain a steady frying temperature to avoid burning the funnel cakes.
  4. Fry the Funnel Cakes: Using a funnel, pour about 1/2 cup of batter into it while holding your finger over the opening. Hold the funnel over the hot oil, remove your finger, and move your hand in a zig-zag or swirling motion. This creates a delicate lattice pattern as the batter falls into the oil, forming the funnel cake. Fry until the bottom side is lightly browned.
  5. Flip and Cook Other Side: Carefully flip the funnel cake over using tongs, and fry the other side until it turns golden brown and crispy.
  6. Drain and Serve: Remove the cooked funnel cake from the oil and transfer it onto a paper towel-lined plate to drain excess oil. Generously sprinkle the top with confectioner’s sugar. Repeat the frying process with the remaining batter, ensuring each cake rests on paper towels to keep them crisp and less oily.

Notes

  • Maintain the oil temperature steady at medium to prevent the funnel cakes from burning or becoming greasy.
  • Use a large funnel or a squeeze bottle to create different patterns for the funnel cakes.
  • Serve funnel cakes immediately for best texture and flavor.
  • You can add cinnamon or vanilla extract to the batter for extra flavor.
  • Always drain on paper towels to remove excess oil and keep the cakes crispy.
