Ingredients

Chicken and Seasoning

  • 1 whole chicken (4-5 lbs)
  • 1 tbs salt (for chicken seasoning)

Vegetables

  • 1 lb baby potatoes (halved)
  • 1 lb carrots (roughly chopped)
  • 1 large onion (quartered, divided)

Herbs and Aromatics

  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 2 sprigs sage
  • 1 lemon (zest and half for stuffing)

Butter Mixture

  • 1 1/2 sticks butter (softened, about 12 tablespoons)
  • 4 cloves garlic (minced)
  • 1 tbs Bayou City All Purpose Seasoning (or Creole seasoning)
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (optional but recommended)
  • 1 tsp onion powder
  • 1 tbs rosemary (chopped)
  • Salt and pepper (to taste)

Other Ingredients

  • 4 tbs olive oil
  • 1 tbs salt (for vegetables)
  • 2 tsp black pepper (divided)
  • 1 tbs Bayou City All Purpose Seasoning (for vegetables)
  • 1/2 cup white wine (or chicken stock)

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) to prepare for roasting the chicken and vegetables evenly.
  2. Season chicken: Season the whole chicken all over with 1 tablespoon of salt and set aside. This helps draw out excess moisture and ensures crispy skin after roasting.
  3. Prepare garlic butter: In a small bowl, combine the softened butter, minced garlic, Creole seasoning, smoked paprika, cayenne pepper (if using), onion powder, chopped rosemary, and lemon zest. Mix well and season with salt and pepper to taste.
  4. Butter chicken: Pat the chicken dry thoroughly with paper towels. Rub the prepared garlic butter mixture all over the chicken, making sure to get some under the skin and inside the cavity. Stuff the cavity with lemon half, thyme, rosemary, sage, and half of the quartered onion to infuse flavor during roasting.
  5. Prepare vegetables: In a large bowl, toss the baby potatoes, chopped carrots, and remaining onion with olive oil, 1 tablespoon salt, 2 teaspoons black pepper, Bayou City seasoning, and dried thyme. Transfer the vegetables to a large roasting pan and pour in the white wine or chicken stock to add moisture and flavor.
  6. Roast chicken: Place the chicken breast-side up on a rack set over the vegetables or directly on top of the vegetables in the roasting pan. Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy. Baste the chicken with pan drippings every 30 minutes to keep it moist and flavorful.
  7. Rest chicken: Remove the chicken from the oven and let it rest for 10 to 15 minutes before carving. This allows the juices to redistribute, ensuring moist meat.
  8. Serve: Carve the roasted chicken and serve alongside the tender roasted vegetables. Spoon pan drippings over the top for extra flavor and enjoy your hearty meal.

Notes

  • Using a rack inside the roasting pan helps the chicken cook evenly and keeps the skin crispy.
  • Letting the chicken rest after roasting is crucial for juicy meat.
  • If you prefer less spicy food, reduce or omit the cayenne pepper from the garlic butter.
  • If you don’t have Bayou City All Purpose Seasoning, Creole or Cajun seasoning can be a good substitute.
  • White wine adds additional depth of flavor, but chicken stock is a great non-alcoholic alternative.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (75°C).
  • Leftover roasted vegetables and chicken can be stored in the refrigerator for up to 3 days.
