Description

This creamy tomato gnocchi recipe offers a rich, comforting dish perfect for a quick weeknight dinner. Soft potato gnocchi is cooked in a luscious sauce made from diced tomatoes, heavy cream, Dijon mustard, and Italian seasoning, then finished with fresh basil and the option of parmesan cheese for an extra savory touch.

Ingredients

For the Sauce and Gnocchi

  • 1 tablespoon olive oil
  • 1/2 medium onion, finely chopped
  • 1/4 cup dry white wine
  • 1 tablespoon Dijon mustard
  • 3-4 cloves garlic, minced
  • 1/4 teaspoon Italian seasoning
  • 1 (14 fluid ounce) can diced tomatoes with juices
  • 1 cup heavy whipping cream
  • 1 pound uncooked potato gnocchi
  • 1 small handful fresh basil, torn or chopped
  • Salt and pepper, to taste
  • Freshly grated parmesan cheese (optional), to taste

Instructions

  1. Sauté Onions: Heat olive oil in a skillet over medium-high heat. Add the finely chopped onion and sauté for about 5 minutes, until softened and lightly browned.
  2. Add Wine and Seasonings: Stir in the dry white wine, Dijon mustard, minced garlic, and Italian seasoning. Cook for about a minute, stirring until the mixture is smooth.
  3. Add Tomatoes, Cream, and Gnocchi: Pour in the diced tomatoes with their juices and heavy cream. Add the uncooked gnocchi. Bring the mixture to a gentle bubble again.
  4. Simmer Covered: Reduce heat to medium, cover the skillet, and let cook for 5 minutes to allow the gnocchi to cook through and the sauce to thicken.
  5. Final Stir and Seasoning: Stir the sauce, then add the fresh basil and season with salt and pepper. Cook uncovered for another 2 minutes to thicken the sauce further.
  6. Serve: Stir in freshly grated parmesan cheese if desired, or sprinkle on top when serving. Serve immediately while hot and creamy.

Notes

  • You can substitute heavy cream with half-and-half for a lighter sauce, though it won’t be as rich.
  • For a dairy-free version, omit the cream and parmesan and use a plant-based cream alternative.
  • Feel free to use fresh tomatoes if in season, but drain excess liquid to prevent a watery sauce.
  • Gnocchi can be replaced with store-bought gluten-free gnocchi to make this recipe gluten-free.
  • If you prefer a thicker sauce, allow it to simmer uncovered a few minutes longer.
