Description

This comforting Chicken and Gravy recipe features tender, pan-seared chicken breasts served in a rich, creamy chicken gravy made from a savory roux and chicken stock. Perfectly paired with creamy mashed potatoes, this dish offers a classic homestyle meal in just 30 minutes, ideal for a hearty family dinner.

Ingredients

Chicken

  • 2 large chicken breasts, split lengthwise into thinner breasts (or 4 medium/small chicken breasts)
  • 1 Tbsp olive oil
  • Kosher salt & black pepper, to taste

Gravy

  • 3 Tbsp butter
  • 1 Tbsp chicken base (Better Than Bouillon brand recommended)
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)

Serving

  • Instant Pot mashed potatoes (or your preferred mashed potatoes)

Instructions

  1. Prepare seasonings: In a small bowl, mix together the flour, kosher salt, black pepper, onion powder, and garlic powder. Set this mixture aside for the gravy roux.
  2. Season chicken: Lightly season the chicken breasts with kosher salt and black pepper on all sides to enhance flavor without over-salting.
  3. Cook chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove the cooked chicken from the pan and set aside.
  4. Make roux base: Lower the heat to medium-low and add butter and chicken base to the skillet. Stir to melt the butter and dissolve the chicken base.
  5. Add roux mixture: Sprinkle in the flour and seasoning mixture you prepared earlier. Stir continuously for 30 seconds to 1 minute to form a roux, which will thicken your gravy.
  6. Deglaze and simmer: Slowly pour in the chicken stock while scraping up any browned bits from the bottom of the pan. Add water and whisk thoroughly to eliminate lumps. Allow the gravy to simmer until it thickens to your desired consistency, about 3-5 minutes.
  7. Add cream (optional): Pour in the optional heavy cream and mix well to enrich the gravy's texture and flavor.
  8. Combine chicken and gravy: Shred the cooked chicken if preferred and return it to the skillet along with any collected juices. Let the chicken simmer gently in the gravy for a few minutes to meld flavors.
  9. Final seasoning check: Taste the gravy and adjust seasoning only if necessary, as the chicken base and stock provide sufficient saltiness.
  10. Serve: Spoon the chicken and gravy over freshly made mashed potatoes, egg noodles, or rice. Serve with peas or garlic bread for a complete meal.

Notes

  • Only lightly season the chicken breasts with salt; the chicken base and stock provide enough saltiness.
  • Heavy cream is optional but adds richness to the gravy.
  • Use a meat thermometer to ensure chicken reaches safe internal temperature of 165°F.
  • If desired, shred the chicken before adding it back to the gravy for easier serving.
  • This recipe pairs wonderfully with garlic bread and peas as side dishes.
  • Leftover gravy can be stored in the refrigerator for up to 3 days.
