Description
These delicious black bean burritos feature a creamy and flavorful filling made with black beans, cream cheese, fresh vegetables, and plenty of cheese and onion. Quick and easy to prepare, they make a perfect satisfying meal any night of the week.
Ingredients
For the Burritos
- 2 (10 inch) flour tortillas
- 2 tablespoons vegetable oil
- 1 small onion, chopped
- ½ red bell pepper, chopped
- 1 teaspoon minced garlic
- 1 teaspoon minced jalapeño peppers
- 1 (15 ounce) can black beans, rinsed and drained
- 3 ounces cream cheese, cubed
- ½ teaspoon salt
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C) and wrap the flour tortillas in foil to prepare for warming.
- Bake Tortillas: Place the wrapped tortillas in the preheated oven and bake until heated through, about 15 minutes.
- Cook Vegetables: While tortillas are warming, heat the vegetable oil in a 10-inch skillet over medium heat. Add the chopped onion, red bell pepper, garlic, and jalapeño peppers, cooking and stirring until vegetables soften, approximately 2 minutes.
- Heat Beans and Add Cream Cheese: Stir in the rinsed and drained black beans, cooking until heated through, about 3 minutes. Then add the cream cheese cubes and salt, stirring occasionally as the cream cheese melts evenly into the mixture over 2 minutes.
- Add Cilantro: Stir in the chopped fresh cilantro to finish the flavorful filling.
- Assemble Burritos: Spoon the warm filling in a line across the center of each warmed tortilla. Fold the opposing edges of the tortilla to partially cover the filling, then roll from one open edge tightly to form the burrito.
- Serve: Serve the burritos immediately while warm and enjoy!
Notes
- Use fresh jalapeño for an authentic spicy kick, but adjust quantity to taste for milder burritos.
- For a vegan version, substitute cream cheese with a dairy-free alternative.
- If you prefer a crispier tortilla, you can toast the burrito in a skillet after rolling instead of solely warming in the oven.
- The recipe can be doubled or tripled easily for larger servings.
