Description
This Cottage Cheese Buffalo Chicken Dip is a creamy, protein-packed appetizer combining tangy buffalo wing sauce, low-fat cottage cheese, and Greek yogurt with shredded rotisserie chicken and sharp cheddar cheese. Baked to perfection with a golden bubbly top, it's garnished with green onions and crumbled blue cheese, offering a flavorful kick ideal for game day or casual gatherings.
Ingredients
Dip Base
- ½ cup Buffalo wing’s sauce (I use Frank’s)
- 1 cup low-fat (2%) cottage cheese (don’t use fat-free)
- 1 cup low-fat (2%) plain Greek yogurt
- 1 Tbsp ranch powder (I use Hidden Valley)
Main Ingredients
- 2 cups shredded or finely diced rotisserie chicken (skin and bones removed)
- 1 ½ cups shredded sharp orange cheddar (divided)
Toppings and Serving
- Sliced green onions
- Crumbled blue cheese
- Tortilla chips, whole grain crackers, carrot sticks, celery sticks for serving
Instructions
- Preheat Oven: Position your oven rack to the middle level and preheat the oven to 400°F (204°C) to prepare for baking the dip.
- Blend Base Ingredients: Add the Buffalo wing’s sauce and low-fat cottage cheese to a blender. Blend until completely smooth, which should take about 45 seconds. Transfer this smooth mixture into a mixing bowl.
- Combine Remaining Ingredients: Into the same mixing bowl, add the low-fat plain Greek yogurt, ranch powder, shredded rotisserie chicken, and 1 cup of the shredded sharp cheddar cheese. Mix thoroughly until all ingredients are well combined.
- Assemble the Dip: Pour the combined mixture into a baking dish, spreading evenly to the edges. Sprinkle the remaining ½ cup of cheddar cheese evenly over the top.
- Bake: Bake in the preheated oven for 12-15 minutes or until the cheese on top is melted and the edges are lightly bubbling. To ensure it is heated through without overcooking (which can cause the cottage cheese to separate and become watery), dip a spoon into the center and taste for temperature.
- Garnish and Serve: Immediately remove the dish from the oven. Top with sliced green onions and crumbled blue cheese. Serve warm with tortilla chips, whole grain crackers, carrot sticks, or celery sticks. Enjoy this flavorful, creamy dip while fresh!
Notes
- Do not use fat-free cottage cheese as it affects the creaminess and texture of the dip.
- Be cautious about over-baking to prevent cottage cheese from separating and becoming watery.
- This dip pairs well with a variety of dippers such as chips, crackers, and fresh vegetables, making it versatile for different dietary preferences.
- If spice level is preferred milder or hotter, adjust the amount or type of Buffalo wing sauce accordingly.
