Ingredients
Egg Preparation
- 12 Hard-Boiled Eggs
- 4 teaspoons White Vinegar (divided)
- Pastel Food Coloring: 4 drops each of pink, purple, blue, yellow
- About 4 cups Water (approximately 1 cup per bowl for dyeing)
Deviled Egg Filling
- 1/3 cup Mayonnaise
- 1 teaspoon White Vinegar
- 2 teaspoons Yellow Mustard
- Salt & Pepper to taste
Garnish
- Paprika (for garnish)
Instructions
- Boil the eggs: Place the eggs in a single layer in a large saucepan and cover with at least 2 inches of water. Bring to a rolling boil, then turn off the heat, cover the pot, and let the eggs sit undisturbed for 12 minutes (add extra time if at high altitude).
- Cool the eggs: Remove each egg with a slotted spoon and transfer them to a bowl of ice cold water to cool completely, which stops the cooking process and makes peeling easier.
- Peel and halve the eggs: Once cooled, peel each egg carefully and slice them lengthwise. Gently remove the yolks and place them in a large bowl. Rinse the egg whites briefly to remove any residual yolk and pat them dry thoroughly with paper towels.
- Prepare the color dye baths: In four separate bowls, combine about 1 cup of water and 1 teaspoon of white vinegar each. Add 4 drops of a different pastel food coloring (pink, purple, blue, yellow) to each bowl and stir to evenly distribute the color.
- Dye the egg whites: Submerge the egg white halves into the colored water baths, soaking them until they reach your desired pastel hue. Remove the eggs and lay them out on paper towels to dry completely before filling.
- Make the filling: Mash the reserved egg yolks with mayonnaise, 1 teaspoon of white vinegar, yellow mustard, salt, and pepper until the mixture is smooth and creamy. Adjust seasoning to your taste.
- Assemble deviled eggs: Transfer the yolk filling into a piping bag fitted with a star tip and pipe the mixture neatly into each colored egg white half.
- Garnish and chill: Lightly sprinkle paprika over the filled eggs for color and flavor. Cover the deviled eggs and refrigerate for at least 30 minutes to allow the flavors to meld and the filling to set before serving.
Notes
- For best results, ensure egg whites are completely dry before dyeing to prevent colors from running.
- Adjust dye soaking time to achieve lighter or deeper pastel shades.
- You can prepare the eggs a day ahead and refrigerate them covered to save time.
- Add a pinch of cayenne pepper to the filling for a spicy twist.
- Use a gentle hand when peeling to keep egg whites intact and smooth.
