Description
This Coconut Fried Rice recipe is a flavorful and aromatic dish featuring cooked coconut rice stir-fried with coconut oil, fresh ginger, green onions, and sweetened coconut flakes. The rice is cooked in a skillet until crisp and golden, making it a delightful side or light meal with a subtle tropical flair.
Ingredients
For the Stir-Fry
- 2 tablespoons coconut oil
- 3 green onions, thinly sliced, plus more for garnish
- ¼ cup sweetened coconut flakes
- 2 teaspoons freshly grated ginger
- 4 cups cooked Coconut Rice, preferably day-old
Instructions
- Cook the veggies and coconut flakes. Heat the coconut oil in a large skillet or wok over medium-high heat. Once the oil is hot and glistening, add the thinly sliced green onions, sweetened coconut flakes, and freshly grated ginger. Stir frequently as you cook until the coconut flakes start to turn golden brown, which should take about 4 minutes. This step infuses the oil with the flavors and adds a toasty texture to the flakes.
- Cook the rice. Add the cooked coconut rice to the skillet, stirring to evenly coat the rice in the flavored coconut oil mixture. Spread the rice out evenly across the skillet’s bottom and let it cook undisturbed until it starts to crisp and brown on the bottom, roughly 5 minutes. Then stir the rice gently to redistribute it and continue cooking it undisturbed for another 2 to 3 minutes to develop a slightly crispy texture throughout.
- Serve the rice. Remove the skillet from heat and divide the coconut fried rice into serving bowls. Garnish liberally with additional sliced green onions for added freshness and color before serving.
Notes
- Using day-old cooked rice is essential to achieve the best texture in fried rice, as fresh rice tends to be too moist and clumps.
- If you prefer less sweetness, you can reduce the amount of sweetened coconut flakes or substitute with unsweetened flakes.
- This recipe can easily be modified by adding vegetables, tofu, or protein of choice to make it a complete meal.
- Be careful when browning the coconut flakes—they can burn quickly if left unattended.
