Description

This classic Pot Roast recipe delivers a tender and flavorful beef roast slow-cooked in a rich broth with red wine, aromatic herbs, and hearty vegetables like potatoes, carrots, and celery. Perfectly seared and oven-braised low and slow, this comforting dish is ideal for family dinners and gatherings, providing a succulent, melt-in-your-mouth meal with a luscious homemade gravy option.

Ingredients

Meat and Seasoning

  • 1 tablespoon olive oil
  • 3 to 4 pounds chuck roast (or rump roast)
  • Salt and pepper to taste

Broth and Flavorings

  • 1 large yellow onion (chopped, or two small onions)
  • 2 cups beef broth (or as needed)
  • 1 cup red wine
  • 4 cloves garlic (coarsely chopped)
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme leaves
  • 1 bay leaf

Vegetables

  • 1 pound baby potatoes (or chopped red potatoes)
  • 4 carrots (cut into 2-inch pieces)
  • 2 ribs celery (cut into 1 ½-inch pieces)

Optional for Gravy

  • All-purpose flour or cornstarch (for thickening)
  • Butter (for making roux-based gravy)

Instructions

  1. Preheat Oven: Preheat your oven to 300°F to prepare for slow roasting the beef.
  2. Season the Roast: Generously season the 3 to 4-pound chuck roast with salt and pepper on all sides to enhance flavor.
  3. Sear the Beef: Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, approximately 4 minutes per side, adding more oil if necessary to prevent sticking and ensure even browning.
  4. Add Aromatics and Liquids: Arrange the chopped onions around the roast inside the Dutch oven. In a separate bowl, combine beef broth, red wine, coarsely chopped garlic, dried rosemary, and dried thyme leaves, then pour this mixture over the roast. Add the bay leaf to infuse additional flavor.
  5. Bring to Simmer: Place the Dutch oven on the stovetop over medium-high heat and bring the liquid just to a simmer, ensuring all ingredients start melding before oven braising.
  6. Braise in Oven: Cover the Dutch oven with its lid and transfer it to the preheated oven. Cook the roast for 2 hours, allowing it to slowly become tender.
  7. Add Vegetables: After 2 hours, add baby potatoes, carrots, and celery to the Dutch oven around the roast. Continue cooking for an additional 2 hours or until the roast and potatoes become fork-tender, ensuring all components are perfectly cooked.
  8. Finish and Serve: Remove the bay leaf and gently shred the beef into large pieces with a fork or slice into thick slices. Serve the roast with the cooking juices or prepare a gravy by thickening the liquid with flour or cornstarch and optionally a butter roux for added richness.

Notes

  • Using red wine adds depth and richness to the broth, but it can be substituted with additional beef broth if preferred.
  • For gravy, use all-purpose flour or cornstarch to thicken the cooking liquid. Making a butter roux before adding the broth can create a richer texture.
  • Choosing a chuck roast provides ideal marbling for tenderness, but rump roast is a good alternative.
  • Maintain low oven temperature and long cooking time to ensure the meat becomes tender without drying out.
  • Vegetables can be adjusted to personal preference or seasonal availability.
