Description

Cinnamon Palmiers are delightful, crisp, and sweet puff pastry cookies flavored with cinnamon, cardamom, and sugar. These elegant, flaky treats are perfect for holiday celebrations or anytime you crave a light, spiced dessert.

Ingredients

Spice Sugar Mixture

  • ⅓ cup white sugar
  • ¾ teaspoon ground cinnamon
  • ⅛ teaspoon ground cardamom

Additional Sugar

  • ¼ cup white sugar

Main

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon butter, melted

Instructions

  1. Prepare Ingredients: Gather all ingredients to ensure everything is measured and ready for use before starting.
  2. Mix Spices and Sugar: In a small bowl, thoroughly mix ⅓ cup white sugar, ground cinnamon, and ground cardamom until evenly combined.
  3. Prepare Work Surface: Sprinkle the remaining ¼ cup white sugar onto a clean work surface to prevent sticking and add extra sweetness to the pastry bottom.
  4. Roll Out Puff Pastry: Unfold the thawed puff pastry sheet and place it over the sugared surface. Use a rolling pin to roll the pastry to a 10x15-inch rectangle, ensuring an even thickness.
  5. Butter and Sugar Coating: Brush the entire surface of the puff pastry with melted butter, then evenly sprinkle the cinnamon-cardamom sugar mixture over the top to coat completely.
  6. Roll Pastry: Starting from one long edge, tightly roll the pastry toward the center stopping halfway. Repeat rolling from the opposite long edge to meet the first roll in the middle, forming a double-rolled log.
  7. Seal Rolls: Wet your finger with water and lightly moisten the long edges where the two rolled sections meet. Press gently to seal together so the roll holds its shape during chilling and baking.
  8. Chill Dough: Place the rolled dough in the refrigerator for 5 to 10 minutes until it is slightly firm but still pliable, making slicing easier and preventing spreading in the oven.
  9. Preheat Oven and Prepare Tray: Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  10. Slice Pastry: Using a sharp knife, slice the chilled dough roll into ¼-inch thick slices. Arrange the slices 1 inch apart on the prepared baking sheet to allow room for expansion.
  11. Bake: Bake in the preheated oven for about 12 minutes or until the palmiers turn golden brown and crisp on the edges.
  12. Cool: Allow the palmiers to rest briefly on the baking sheet to firm up, then transfer them to a wire rack to cool completely before serving to maintain their crisp texture.

Notes

  • Ensure puff pastry is well thawed but still cold for easier handling and better puff during baking.
  • You can substitute cardamom with nutmeg or omit it for a simpler cinnamon sugar flavor.
  • Store palmiers in an airtight container at room temperature for up to 3 days to preserve their crispness.
  • Feel free to drizzle melted chocolate over cooled palmiers for an indulgent variation.
