Description

These Chocolate Nut & Date Bars are a delicious, no-bake treat combining the natural sweetness of dates with crunchy nuts and rich milk chocolate. Perfect for a dessert or snack, they are easy to make and require just a few simple ingredients. The bars are firmed up in the freezer, making them a refreshing and satisfying indulgence with a perfect balance of textures and flavors.

Ingredients

Nut & Date Base

  • 1 cup unsalted nuts (a mix of almonds, walnuts, and/or cashews)
  • 1 cup pitted dates
  • Salt, to taste

Chocolate Topping

  • 1 cup milk chocolate (chopped chocolate bar or chocolate chips)
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the Pan: Line an 8×4 loaf pan with parchment paper to prevent sticking and make removal easier.
  2. Make the Nut & Date Mixture: In a food processor, combine the nuts, pitted dates, and a pinch of salt. Process until the pieces are small and the mixture sticks together easily, which may take a few minutes.
  3. Shape and Chill the Base: Scoop the mixture into the prepared loaf pan. Use your hands to press it down firmly and flatten the surface evenly. Place the pan in the freezer for 10 minutes to harden the mixture.
  4. Melt the Chocolate: In a microwave-safe bowl, combine the milk chocolate and coconut oil. Microwave for 2 minutes, stirring halfway through to ensure even melting and smooth texture.
  5. Spread Chocolate Topping: Pour the melted chocolate over the chilled nut and date mixture in the loaf pan. Use the back of a spoon or spatula to spread it evenly across the surface. Return the pan to the freezer for 1 hour to allow the chocolate to set firmly.
  6. Slice and Serve: Remove the set bar from the pan using the parchment paper. Cut into 8 even slices. Optionally, sprinkle flaky salt on top for a touch of contrast and extra flavor.

Notes

  • You can customize the nut mix according to your preference or what you have on hand.
  • If you prefer a darker chocolate flavor, substitute milk chocolate with semi-sweet or dark chocolate.
  • The crispy texture can be enhanced by toasting the nuts before processing, but this is optional.
  • These bars should be stored in the refrigerator or freezer to maintain firmness.
  • Flaky salt on top adds a nice balance of sweet and salty, but is optional depending on your taste.
