This Chili Cheese Potato Skillet is a hearty and flavorful dish combining crispy air-fried potatoes with seasoned ground beef, chili beans, and melted cheddar cheese. Topped with fresh green onions, sour cream, and jalapeños, it's a perfect comfort meal ready in just 40 minutes.

Ingredients

Potatoes and Seasoning

  • 5 small/medium potatoes
  • Olive oil (for tossing)
  • Salt (to taste)
  • Black pepper (to taste)
  • Garlic powder (to taste)
  • Paprika (to taste)

Chili Beef Mixture

  • 1 lb ground beef
  • 1 onion, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tsp chili powder
  • 1 tbsp minced garlic
  • 10 oz can diced tomatoes and green chiles, drained
  • 15.5 oz can chili beans, drained

Toppings

  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, chopped
  • Sour cream (for serving)
  • Jalapeños (for serving)

Instructions

  1. Prep the potatoes: Peel, wash, and cut the potatoes into cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika, ensuring an even coating.
  2. Cook potatoes in air fryer: Place the seasoned potatoes in the air fryer basket and cook at 400°F for about 25 minutes, shaking the basket a couple of times during cooking to ensure crispiness on all sides.
  3. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and chopped onion, seasoning with salt, pepper, onion powder, paprika, and chili powder. Cook until the beef is fully browned, stirring to combine flavors evenly. Drain excess grease from the skillet.
  4. Add garlic, tomatoes, and beans: Stir in minced garlic, drained diced tomatoes with green chiles, and drained chili beans. Simmer the mixture on the stove for a few minutes, allowing the flavors to meld while the potatoes finish cooking.
  5. Combine potatoes and beef mixture: Add the crispy air-fried potatoes to the skillet. Stir everything together to combine evenly.
  6. Melt the cheese: Sprinkle shredded cheddar cheese over the top of the skillet mixture. Transfer the skillet to a preheated oven at 400°F for a few minutes until the cheese melts and bubbles.
  7. Garnish and serve: Remove the skillet from the oven. Top with chopped green onions. Serve warm with sour cream and jalapeños on the side. Enjoy your delicious Chili Cheese Potato Skillet!

Notes

  • Adjust seasoning amounts to taste, especially salt and chili powder, depending on your preference for spice.
  • Use an oven-safe skillet to easily transfer from stovetop to oven for melting cheese.
  • If an air fryer is not available, potatoes can be roasted in a 400°F oven for about 30-35 minutes, turning halfway through.
  • Drain excess grease after browning beef to keep the dish from being too greasy.
  • For a vegetarian version, substitute ground beef with plant-based crumbles and use vegetable beans.
