Description

This Chicken Fajita Quesadillas recipe features tender, seasoned chicken breast combined with sautéed bell peppers and onions, all melted together with gooey quesadilla cheese inside warm flour tortillas. Ready in just 40 minutes, it's an easy, flavorful Tex-Mex favorite perfect for a quick weeknight dinner or casual gathering.

Ingredients

Chicken and Vegetables

  • 1 lb chicken breast, cut into thin slices
  • 1 medium white onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Juice from 1 lime
  • 1 (1 oz) packet fajita seasoning
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Quesadilla & Cooking

  • 4 large burrito-style flour tortillas
  • 1 ½ cups shredded quesadilla or Mexican blend cheese
  • 2 tbsp salted butter

Instructions

  1. Season the Vegetables: In a large bowl, toss the sliced onions and bell peppers with half of the fajita seasoning and 1 tablespoon of olive oil until everything is well coated and glossy.
  2. Sauté the Vegetables: Heat a large cast-iron skillet over medium-high heat and add the seasoned veggies. Cook for 10–12 minutes, stirring occasionally, until they become soft, slightly charred, and aromatic. Transfer to a plate and set aside.
  3. Season the Chicken: In the same bowl, toss the chicken slices with the remaining fajita seasoning and the other tablespoon of olive oil, ensuring all pieces are evenly coated.
  4. Cook the Chicken: Add the chicken to the hot skillet and cook for 6–8 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
  5. Combine Filling: Return the sautéed peppers and onions to the skillet with the chicken. Squeeze fresh lime juice over the mixture and stir well to blend the flavors. Remove from heat.
  6. Assemble the Quesadillas: Lay one tortilla flat and spoon about one-quarter of the fajita filling over half of the tortilla. Sprinkle generously with shredded cheese, then fold the tortilla over to enclose the filling.
  7. Cook the Quesadilla: Heat a clean skillet or griddle over medium heat and melt about ½ tablespoon of butter. Place the quesadilla on the skillet and cook for 2–3 minutes on each side, or until golden and crispy. Repeat for remaining quesadillas, adding more butter as needed.
  8. Serve: Slice each quesadilla into halves, garnish with chopped fresh cilantro, and serve warm for melty, cheesy perfection.

Notes

  • For extra flavor, you can add a dash of smoked paprika or cayenne pepper to the fajita seasoning.
  • Use a non-stick skillet if you don’t have a cast-iron skillet for easier cooking and cleanup.
  • Leftover quesadillas can be refrigerated and warmed up in a skillet or oven to maintain crispiness.
  • To make this recipe gluten-free, substitute the flour tortillas with gluten-free tortillas.
  • Serve with sour cream, guacamole, or salsa for added richness and taste.
