Description

A delicious and creamy Cheesy Taco Spaghetti that combines seasoned ground beef with melted Monterey Jack cheese, diced tomatoes with green chiles, and perfectly cooked spaghetti noodles. Ready in just 30 minutes, this comforting skillet meal is perfect for a family-friendly dinner packed with bold flavors and cheesy goodness.

Ingredients

Meat and Vegetables

  • 1 pound Ground Beef
  • 1 cup Yellow Onion, diced
  • 1 cup Bell Pepper, diced

Pasta

  • 1/2 pound Spaghetti Noodles

Other Ingredients

  • 1 packet Taco Seasoning
  • 10 ounces Diced Tomatoes with Green Chiles, undrained
  • 12 ounces Evaporated Milk
  • 3 cups Monterey Jack Cheese, shredded
  • 1 tablespoon Cornstarch
  • Water (equal parts for cornstarch slurry)

Instructions

  1. Cook Noodles and Brown Meat: Cook the spaghetti noodles according to the package instructions until al dente. In a large skillet over medium-high heat, add the ground beef, diced onions, and bell peppers. Cook until the beef is browned with no pink remaining and the vegetables are tender. Drain off excess grease and set the mixture aside.
  2. Make Cheese Sauce: Reduce the skillet heat to low and pour in the evaporated milk. Warm it gently, then gradually add the shredded Monterey Jack cheese, stirring continuously until the cheese has fully melted and the sauce is smooth. Next, mix the cornstarch with an equal amount of cold water to create a slurry, then stir it into the cheese sauce to thicken it.
  3. Combine and Finish: Return the cooked ground beef mixture to the cheese sauce in the skillet. Add the taco seasoning packet and the undrained diced tomatoes with green chiles. Stir well to combine all ingredients. Finally, add the drained spaghetti noodles and toss everything together until evenly coated and heated through. Serve immediately and enjoy your cheesy taco spaghetti!

Notes

  • Drain excess grease from the cooked ground beef to keep the dish from becoming too oily.
  • Use freshly shredded Monterey Jack cheese for better melting and flavor than pre-shredded options.
  • The cornstarch slurry helps thicken the cheese sauce to achieve a creamy consistency.
  • Adjust the amount of taco seasoning if you prefer more or less spice.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or in the microwave.
