Ingredients
Wrap Ingredients
- 2 large tortillas (regular or low-carb/high-protein)
Chicken Filling
- 7 oz cooked chicken (about 200 grams, chopped, rotisserie is great)
- 2 garlic cloves (minced or grated, adjust to taste)
- 2 tablespoons light mayonnaise
- 1 tablespoon light Greek yogurt (or plain yogurt)
- 2 teaspoons hot sauce (like Frank’s)
- ¼ teaspoon salt
Toppings
- 3 oz grated cheese (about 90 grams, cheddar blend)
- 1 green onion (chopped)
Cooking
- Olive oil spray
Instructions
- Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt, hot sauce, and salt. Mix thoroughly until all ingredients are evenly incorporated.
- Lay out wrap: Place one tortilla flat on a clean surface. On the lower third of the tortilla, sprinkle about 2 tablespoons of grated cheese. Then add approximately two-thirds of a cup of the prepared chicken mixture on top. Add another tablespoon of grated cheese and sprinkle some chopped green onion over the filling.
- Fold wrap: Fold in the sides of the tortilla over the filling, then roll the tortilla tightly from the bottom upwards, ensuring the filling is enclosed securely.
- Prepare pan: Heat a non-stick pan over medium-high heat and lightly spray it with olive oil spray to prevent sticking and add crispness.
- Cook wraps: Place the folded wraps seam-side down in the hot pan. Cook for 3 to 4 minutes on each side until the wraps become crispy and golden brown. Cover the pan with a lid to help heat the inside thoroughly and melt the cheese.
- Serve: Once cooked, remove the wraps from the pan. Slice each wrap in half diagonally and serve immediately while warm and melty.
Notes
- Using rotisserie chicken saves time and adds extra flavor.
- Adjust the amount of garlic and hot sauce according to your taste preferences.
- You can swap the cheddar blend cheese with mozzarella or Monterey Jack for a different cheesy flavor.
- Light mayonnaise and Greek yogurt keep the filling creamy but lower in calories.
- Cooking the wraps seam-side down first helps keep them sealed during cooking.
