Cheeseburger Pretzel Bombs are a fun and delicious appetizer featuring savory mini meatballs and melted American cheese wrapped in soft pizza dough, boiled in a baking soda bath for that classic pretzel texture, and baked to golden perfection. Perfect for parties or game day snacks, these bites combine the flavors of a cheeseburger with a soft pretzel crust.
Ingredients
Dough and Filling
- 1 lb pizza dough (455 g), left out at room temperature for 15-20 minutes
- 7 slices American cheese, cut in half
- 14 frozen mini meatballs, thawed
Baking Soda Bath
- 1/4 cup baking soda (45 g)
- 5 cups water (1.2 L)
Finishing
- 1 egg, beaten
- Coarse sea salt
- Yellow mustard, for serving (optional)
Instructions
- Preheat Oven: Preheat your oven to 425˚F (220˚C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Dough Balls: Cut the pizza dough into 14 evenly sized pieces. Stretch each piece into an 8-inch (20 cm) long strip to prepare for assembling the filling.
- Assemble Bombs: Place half a slice of American cheese at the top of each dough strip, then add a thawed mini meatball on top of the cheese. Roll the dough tightly around the cheese and meatball, making sure to seal the edges well to form a ball. Place each ball seam-side down on the prepared baking sheet.
- Boil Baking Soda Solution: In a saucepan, bring 5 cups (1.2 L) of water to a boil. Add 1/4 cup (45 g) of baking soda and stir until fully dissolved. This alkaline bath will create the distinct pretzel texture and flavor.
- Boil Dough Balls: Carefully drop the dough balls into the boiling baking soda solution in batches, boiling each batch for 30 seconds. This step firms up the dough exterior to form a chewy pretzel crust once baked. Use a slotted spoon to remove the balls and place them on a towel to dry off any excess water.
- Apply Egg Wash and Salt: Brush each boiled dough ball with the beaten egg to promote even browning and help coarse sea salt adhere. Generously sprinkle the top of each ball with coarse sea salt for that signature pretzel finish.
- Bake: Transfer the baking sheet to the preheated oven and bake the pretzel bombs for 20 minutes, or until they are golden brown and slightly crisp on the outside.
- Serve: Remove the pretzel bombs from the oven and let them cool slightly before serving. Serve warm with yellow mustard for dipping if desired.
Notes
- Make sure to thaw mini meatballs completely before assembling to ensure even cooking.
- Stretching the dough evenly helps maintain consistent size and baking time for each pretzel bomb.
- The baking soda bath is essential for a proper pretzel crust; do not skip this step.
- Use coarse sea salt for authentic pretzel flavor and texture on top.
- Leftover pretzel bombs can be reheated in the oven at 350°F for a few minutes to regain crispness.
