Ingredients
Cheeseburger Filling
- 1 lb ground beef
- 1/2 medium yellow onion, minced
- 1 Tbsp vegetable oil (for cooking)
- Salt and fresh cracked black pepper, to taste
- 5 slices American cheese
- 1/2 cup diced pickles
Egg Rolls
- 13-14 egg roll wrappers
- 1 egg white, gently whisked (for sealing)
- Oil for frying (enough for deep frying, about 2 inches deep)
Dipping Sauce
- 1/4 cup mayonnaise
- 1 Tbsp tomato paste
- 1 garlic clove, pressed
- 1 tsp paprika
- Salt and fresh cracked black pepper, to taste
Instructions
- Sauté Onions: Preheat a medium pan over medium heat. Add 1 tablespoon of vegetable oil and the minced onion. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
- Cook Ground Beef: Add the ground beef to the pan. Break it up thoroughly with a spatula. Season with salt and freshly cracked black pepper. Cover and cook until the meat begins to brown, stirring occasionally and breaking up any clumps. Once cooked through, drain off any excess liquid and transfer the beef to a mixing bowl.
- Mix in Cheese and Pickles: Break up the American cheese slices and add them to the warm beef. Stir continuously until the cheese is fully melted and the mixture is evenly combined. Fold in the diced pickles to add a tangy crunch.
- Heat Oil for Frying: Heat oil in a deep skillet or fryer to about 350°F (175°C). Keep the oil at temperature while preparing the egg rolls.
- Prepare Egg Roll Wrappers: Set the whisked egg white close by for sealing the wrappers. Place each egg roll wrapper on a flat surface oriented as a diamond. Spoon about 2 tablespoons of the cheeseburger filling along the center, leaving about an inch border on each side.
- Roll the Egg Rolls: Fold the corner closest to you over the filling and tuck it underneath. Fold both side corners toward the center to form an open envelope shape. Lightly brush or dip your fingers into the egg white and run it along the edges to seal them tightly. Roll the wrapper away from you carefully, ensuring the filling stays inside.
- Fry Egg Rolls: Fry the prepared egg rolls in batches, turning them once the first side turns golden brown. Fry until all sides are evenly golden and crispy, approximately 3-5 minutes per batch. Remove and drain on paper towels.
- Make Dipping Sauce: Whisk together the mayonnaise, tomato paste, pressed garlic, paprika, salt, and black pepper until smooth and fully combined.
- Serve: Plate the hot cheeseburger egg rolls and serve immediately with the prepared dipping sauce on the side.
Notes
- Ensure the oil temperature stays between 350°F to 360°F to avoid greasy egg rolls.
- Do not overfill the egg rolls to prevent breakage during frying.
- You can substitute American cheese with cheddar or another melty cheese of your choice.
- For a crispy, lighter option, bake the egg rolls at 425°F for 15-20 minutes, turning halfway.
- Leftover filling can be refrigerated and used as a burger topping or in sandwiches.
