Description

This creamy and cheesy Cauliflower Au Gratin casserole is a low-carb, keto-friendly dish perfect as a comforting side or main. Featuring tender cauliflower slices baked in rich heavy cream and topped with melted Swiss Gruyere cheese and green onions, it's an easy yet elegant recipe that brings warmth and flavor to your table.

Ingredients

Vegetables

  • 1 head cauliflower (or 4 cups), sliced thin
  • 4 green onions, sliced

Dairy & Cheese

  • 2 cups Swiss Gruyere cheese, shredded (can also use just Swiss cheese)
  • 1 1/2 cups heavy cream

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and spray an 8x10 inch casserole dish with cooking spray to prevent sticking.
  2. Prepare Cauliflower Layers: Slice the cauliflower into thin slices. Place half of these slices in an even layer at the bottom of the prepared baking dish.
  3. Add Cheese and Onions: Sprinkle half of the shredded Gruyere cheese evenly over the cauliflower layer. Then, evenly distribute the sliced green onions on top. Season with salt and black pepper to taste.
  4. Layer Remaining Cauliflower: Add the remaining cauliflower slices on top of the cheese and onions, creating a second even layer.
  5. Add Cream and Top Cheese: Pour the heavy cream evenly over the layered cauliflower. Then sprinkle the remaining shredded cheese on top to cover the dish.
  6. Cover and Bake: Cover the casserole dish tightly with foil and bake in the preheated oven for 30 minutes. This allows the cauliflower to begin softening and the cream to meld with the cheese.
  7. Uncover and Continue Baking: Remove the foil and bake for an additional 40 minutes, or until the cauliflower is fork tender and the cheese top is golden brown and bubbly. Check periodically to avoid over-browning.
  8. Rest and Serve: Remove the dish from the oven and let it sit for 5 minutes to thicken and set before serving. Store any leftovers in an airtight container.

Notes

  • Use thinly sliced cauliflower to ensure even cooking and tenderness.
  • Gruyere can be substituted with Swiss cheese if preferred.
  • Adjust salt and pepper to your taste, keeping in mind the cheese adds saltiness.
  • Covering with foil during the first part of baking helps cook the cauliflower without drying out the dish.
  • Let the casserole rest after baking to allow it to thicken for easier serving.
  • Leftovers can be refrigerated and reheated gently in the oven or microwave.
