Ingredients
Roasted Plums
- 1 pound plums, halved
- ¼ cup sugar
- 5 cardamom pods, crushed
- 1 vanilla bean pod, split lengthwise, seeds scraped
- 2 tablespoons fresh lemon juice
Cardamom Plum Sorbet
- 1 quantity of roasted plums (prepared as above)
- 1 ½ cups water
- 1 cup sugar
- 5 cardamom pods, crushed
- Fresh plums for serving, pitted and sliced (optional)
Instructions
- Preheat and roast plums: Preheat the oven to 375°F. In a roasting dish, arrange halved plums cut side up with sugar, lemon juice, crushed cardamom pods, and the split vanilla bean with seeds in a single layer. Bake for 30 minutes until the plums are tender. Remove from oven and allow to cool.
- Prepare plum puree: Remove pits from the roasted plums and discard solids like cardamom pods and vanilla bean. Reserve the plum juices separately.
- Make cardamom syrup: In a small saucepan over medium-high heat, combine water, sugar, and crushed cardamom pods. Bring to a boil, stirring occasionally until sugar dissolves. Remove from heat and let steep for 10 minutes to infuse the cardamom flavor. Strain the syrup to remove cardamom pods.
- Combine and blend: In a high-speed blender, add the reserved roasted plums and their juices along with the strained cardamom syrup. Puree until smooth.
- Strain the sorbet base: Pass the puree through a fine mesh sieve to ensure a smooth texture without pulp or seeds.
- Chill the mixture: Transfer the strained mixture to an airtight container and refrigerate for 2 hours to chill thoroughly.
- Churn the sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a frozen, sorbet consistency.
- Freeze to set: Transfer the churned sorbet to an airtight container and freeze for at least 6 hours or overnight to fully set.
- Serve: Scoop the sorbet into serving dishes and garnish with fresh sliced plums if desired. Enjoy your refreshing cardamom plum sorbet!
Notes
- If you don’t have an ice cream maker, you can place the mixture in a shallow container and freeze, stirring every 30 minutes until smooth and frozen.
- Adjust sweetness by tasting the roasted plums and syrup before blending and adding more sugar if needed.
- Make sure to strain thoroughly for a silky smooth sorbet texture without any graininess or seeds.
- The sorbet can be stored in the freezer for up to one week, but is best enjoyed fresh.
- For a dairy-free and vegan dessert, this recipe is naturally suitable as it contains no animal products.
