Ingredients
Chocolate Shell
- 32 oz milk chocolate, chopped and divided
Creme Filling
- 1 cup light corn syrup
- 1/2 cup unsalted butter, softened
- 2 tsp vanilla bean paste
- 2 tbsp milk
- 1/2 tsp fine salt
- 6 cups powdered sugar
- 2 drops orange gel food coloring
- 1 drop yellow gel food coloring
Instructions
- Prepare Muffin Pan: Line a mini muffin pan with 48 parchment paper mini cupcake liners and set aside to ensure easy removal of the finished bites.
- Melt Initial Chocolate: Place 16 oz of the milk chocolate in a microwave-safe bowl. Heat on HIGH for 30 seconds, stir well, then continue microwaving in 20 second increments, stirring after each, until smooth and fully melted.
- Create Chocolate Base: Spoon or pipe a small amount of melted chocolate into the bottom of each liner just enough to cover the base. Gently tap the pan on the counter to level and remove air bubbles, then refrigerate for 5 to 10 minutes until chocolate firms up.
- Make Creme Filling: In a stand mixer fitted with a paddle attachment, beat softened butter and light corn syrup on medium speed until thick and creamy.
- Add Flavorings: Add milk, vanilla bean paste, and fine salt to the butter mixture and mix until combined.
- Incorporate Powdered Sugar: With mixer on low, gradually add powdered sugar about 1 cup at a time, mixing well and scraping bowl as needed, until a stiff and smooth creme forms.
- Separate Creme Portions: Transfer about two-thirds of the white creme mixture to a piping bag and set aside for the main filling.
- Color Remaining Creme: Add orange and yellow gel food coloring to remaining creme in the bowl and mix thoroughly until a rich orange shade is achieved. Transfer this colored creme to a second piping bag.
- Pipe White Creme: Snip the white creme piping bag tip to create a 1/2 inch opening. Pipe a generous mound of white creme into the center of each chocolate base, leaving a small border around the edges for the top chocolate layer.
- Add Yolk Detail: Snip a small opening in the orange creme piping bag and pipe a small dot in the center of each white creme mound to create an egg yolk effect.
- Melt Remaining Chocolate: Add the remaining 16 oz of milk chocolate to the bowl with any leftover melted chocolate. Microwave in 20 second increments, stirring after each, until fully melted and smooth.
- Top with Chocolate: Transfer melted chocolate to a clean piping bag, snip the tip, and pipe chocolate over the creme in each cup to completely cover and seal to the edges.
- Set the Bites: Gently tap the pan to level the tops, then refrigerate for at least 30 minutes until the chocolate is fully set and firm.
- Serve or Store: Peel the bites from the liners and serve immediately or store in an airtight container in the refrigerator until ready to enjoy.
Notes
- Use high-quality milk chocolate for the best flavor and smooth melting.
- Make sure the butter is softened to room temperature to achieve a creamy filling texture.
- Chilling the chocolate base helps prevent the creme from melting the chocolate when added.
- Adjust gel food coloring quantity if you want a stronger or lighter orange tone in the creme.
- Store the finished bites refrigerated in an airtight container to maintain freshness and firmness.
