Ingredients
Chicken and Vegetables
- 1 large boneless skinless chicken thigh
- Kosher salt, to taste
- 2 tablespoons olive oil, divided
- 2 tablespoons water
- 2 tablespoons chopped white or yellow onion
- 2 tablespoons chopped green pepper
Sauces and Cheese
- 2 tablespoons Louisiana-style hot sauce
- 2 tablespoons ranch dressing
- 1/2 cup grated smoked cheddar cheese
- 1/2 cup blue cheese crumbles
Sandwich Assembly
- Butter, for spreading
- 4 slices white bread
Instructions
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Lightly season the chicken thigh with kosher salt and add it to the hot oil. Cook for about 5 minutes or until golden brown on one side. Flip the chicken, add 2 tablespoons of water, cover the skillet, and simmer for another 5-8 minutes or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it cool slightly before shredding or chopping it.
- Sauté Vegetables and Combine Filling: Dispose of any leftover liquid in the skillet and wipe it clean. Add the remaining tablespoon of olive oil and heat over medium heat. Add the chopped onion, green pepper, and a big pinch of salt. Cook until the vegetables soften, about 5-8 minutes. Stir in the shredded chicken, Louisiana-style hot sauce, and ranch dressing. Remove the skillet from heat and mix well to combine the buffalo chicken filling.
- Prepare the Grilled Cheese Sandwiches: Heat a second skillet over medium-high heat until hot, then reduce the heat to medium-low. Butter one side of a slice of white bread and place it buttered side down in the skillet. Layer half of the grated smoked cheddar cheese, half of the buffalo chicken filling, and half of the blue cheese crumbles on top. Cover with another slice of bread, buttered side up.
- Cook the Sandwich: Cook the sandwich gently until the cheese has melted and the bottom is golden brown, then carefully flip it over. Cook the other side until golden brown as well. Transfer the finished sandwich to a plate.
- Repeat: Repeat the sandwich assembly and cooking steps for the remaining ingredients to make the second sandwich.
- Serve: Serve the Buffalo Chicken Grilled Cheese immediately for the best flavor and texture. Refrigerate any leftover chicken filling for up to 5 days.
Notes
- Use smoked cheddar for a richer, more flavorful sandwich.
- Adjust the amount of hot sauce according to your preferred spice level.
- Butter the bread generously to achieve a perfectly crisp and golden exterior.
- Ensure chicken is fully cooked to an internal temperature of 165°F for food safety.
- You can substitute white bread with whole wheat or sourdough for a different texture.
