Description
These Buckeye Graham Crackers are a delightful no-bake treat combining creamy peanut butter filling sandwiched between graham crackers and dipped in smooth melted chocolate, with an optional peanut butter drizzle. Perfect for peanut butter and chocolate lovers, they offer a nostalgic twist reminiscent of classic buckeye candies.
Ingredients
Crackers
- 12 graham crackers (broken in half)
Filling
- 3/4 cup creamy peanut butter (like Skippy)
- 4 tablespoons unsalted butter (softened)
- 1-1/4 cups powdered sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
Chocolate Coating
- 1-3/4 cups chocolate chips (semi-sweet, milk, or dark, your choice)
- 1-1/2 tablespoons coconut oil (divided)
Optional Drizzle
- 1 cup peanut butter chips (optional)
- 1/2 tablespoon coconut oil (remaining from above)
Instructions
- Prepare Crackers: Carefully break each graham cracker sheet in half to create squares. Arrange the squares on a lined baking sheet and set aside.
- Make Buckeye Filling: In a large bowl, use an electric hand mixer to combine the creamy peanut butter, softened unsalted butter, powdered sugar, salt, and vanilla extract until the mixture is smooth and well blended.
- Form Filling Balls: Roll the peanut butter mixture into 12 equal-sized balls. Place one ball on each graham cracker square, then top with another cracker square. Gently press to flatten the filling edge to edge, smoothing the sides with your finger to prevent any filling from spilling out.
- Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips with 1-1/2 tablespoons of coconut oil. Microwave in 30-second increments, stirring between each, until the mixture is completely melted and smooth.
- Dip Cookies: Using a fork, dip each graham cracker sandwich into the melted chocolate coating, allowing the excess chocolate to drip off. Tap the fork on the edge of the bowl to help remove extra chocolate. Then, slide the coated sandwich off the fork using a butter knife and place it back onto the lined baking sheet.
- Melt Peanut Butter Chips (Optional): In a separate microwave-safe bowl, combine the peanut butter chips with the remaining 1/2 tablespoon of coconut oil. Microwave in 30-second bursts, stirring frequently, until melted and smooth. Transfer this melted mixture into a piping bottle or a zip-top bag with the corner snipped for drizzling.
- Drizzle and Set: Drizzle the melted peanut butter chip mixture over the chocolate-coated crackers. Once decorated, place the baking sheet in the refrigerator and chill until the chocolate is fully set and firm, approximately 30 minutes to 1 hour.
Notes
- You can use semi-sweet, milk, or dark chocolate chips depending on your preference for the coating.
- The peanut butter chips drizzle is optional but adds a lovely decorative and flavor touch.
- Store these treats in the refrigerator to keep the chocolate coating from melting.
- For a firmer filling, chill the peanut butter mixture balls before assembling the sandwiches.
