It’s a quick and easy recipe perfect for a healthy side dish or light lunch, ready in just 15 minutes.
Ingredients
Vegetables
- 1 medium broccoli head
- 1 medium cauliflower head
Dressing
- 1/2 cup mayonnaise
- 2 Tbsp honey
- 2 Tbsp fresh lemon juice (from 1 small lemon)
Add-ins
- 3/4 cup dried cranberries (craisins)
- 1/2 cup sliced almonds or pine nuts (toasted on a dry skillet until golden)
Instructions
- Prepare Broccoli: Peel the broccoli stem and chop off the dry base. Then chop the broccoli into small florets and dice the stem to use as well, ensuring all parts of the broccoli are utilized.
- Prepare Cauliflower: Remove and discard the cauliflower core and leaves. Dice the cauliflower into bite-sized pieces to match the broccoli florets for even texture in the salad.
- Toast Nuts: Heat a dry skillet over medium-high heat. Add 1/2 cup of sliced almonds or pine nuts and toast them, tossing frequently, until they turn fragrant and golden brown. Remove from heat immediately to prevent burning.
- Combine Salad Ingredients: In a large salad bowl, add the chopped broccoli and cauliflower, toasted nuts, and 3/4 cup dried cranberries (craisins).
- Make Dressing and Toss: In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons honey, and 2 tablespoons fresh lemon juice until smooth and well combined. Pour this dressing over the salad and toss thoroughly to coat all ingredients evenly.
Notes
- Use fresh and crisp broccoli and cauliflower for the best texture and flavor.
- Toasting nuts brings out their flavor and adds a nice crunch; watch them closely to avoid burning.
- You can substitute mayonnaise with a Greek yogurt version for a lighter dressing.
- This salad keeps well in the refrigerator for up to 2 days but is best served fresh for maximum crunch.
- Adjust the honey quantity according to your preferred level of sweetness.
