Description

A quick and delicious breakfast pizza featuring seasoned eggs topped with fresh tomatoes, pepperoni, and melted mozzarella, cooked in a cast-iron skillet and finished under the broiler for a golden cheese crust.

Ingredients

Egg Mixture

  • 2 large eggs (beaten well)
  • Dash Italian seasoning
  • Salt and black pepper to taste

Toppings

  • 2 slices tomato (quartered)
  • 4 slices pepperoni (cut in half)
  • 1 ounce mozzarella cheese (grated)

Instructions

  1. Prepare the pan: Grease an oven-safe 8-inch round high-sided skillet, preferably a seasoned cast-iron pan, to prevent sticking and ensure even cooking.
  2. Preheat pan and broiler: Heat the prepared skillet over medium heat. Meanwhile, set an oven rack about 6 inches below the broiler and preheat the broiler.
  3. Cook the eggs: Pour the beaten eggs into the hot skillet. Sprinkle Italian seasoning, salt, and black pepper evenly over the eggs.
  4. Add toppings: Once the eggs begin to set on the bottom but are still slightly runny on top, arrange the tomato slices, pepperoni halves, and grated mozzarella cheese evenly over the eggs.
  5. Finish cooking eggs: Cover the skillet with a lid and cook for 1 to 2 minutes to allow the eggs to fully set and the toppings to warm through. Remove the skillet from heat.
  6. Brown the cheese: Place the skillet under the preheated broiler for 1 to 2 minutes, watching carefully until the cheese melts and lightly browns to create a golden, bubbly crust. Remove from oven and serve immediately.

Notes

  • Use a seasoned cast-iron skillet for best results and even heat distribution.
  • Watch the broiler closely to prevent burning the cheese.
  • Feel free to swap pepperoni for other breakfast meats like cooked sausage or bacon.
  • Adjust Italian seasoning and salt to taste based on dietary needs.
  • This recipe serves one but can be doubled for more servings using a larger skillet.
