Description

These Blueberry Banana Baked Oatmeal Cups are a wholesome and delicious breakfast or snack option, combining hearty rolled oats with naturally sweet bananas and bursting blueberries. Baked to perfection, they offer a convenient grab-and-go treat packed with fiber and flavor, perfect for busy mornings or a nutritious afternoon bite.

Ingredients

Dry Ingredients

  • 3 cups old-fashioned rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Wet Ingredients

  • 1 cup mashed bananas (2-3 bananas)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup honey (or maple syrup)
  • 2/3 cup almond milk (or milk of your choice)

Fruit

  • 1 and 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat Oven and Prepare Muffin Pan: Preheat your oven to 350°F (175°C). Grease a standard muffin pan with baking spray or line it with paper liners to prevent sticking, then set aside.
  2. Combine Wet Ingredients: In a large mixing bowl, whisk together the mashed bananas, egg, honey, vanilla extract, and almond milk until smooth and well combined.
  3. Add Dry Ingredients: Add the rolled oats, baking powder, salt, and cinnamon to the wet ingredients. Whisk thoroughly until the mixture is evenly combined.
  4. Fold in Blueberries: Gently fold the blueberries into the batter, making sure to distribute them evenly without breaking them up too much.
  5. Fill Muffin Cups: Spoon the batter into the muffin cups, filling each about three-quarters full. Optionally, add a few extra blueberries on top for decoration.
  6. Bake: Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. If using frozen blueberries, bake a few extra minutes as needed.
  7. Cool: Allow the oatmeal cups to cool in the pan for 5 to 10 minutes before transferring them to a wire rack to cool completely.
  8. Store: Store cooled oatmeal cups in an airtight container in the refrigerator for up to 5 days.

Notes

  • Use ripe bananas for maximum sweetness and flavor.
  • Fresh or frozen blueberries both work well; if frozen, slightly increase baking time.
  • These cups can be warmed up in the microwave for 20-30 seconds before serving.
  • Substitute almond milk with any plant-based or dairy milk as preferred.
  • For a vegan option, replace the egg with a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water) and use maple syrup instead of honey.
