Description

This homemade Blackberry Crisp is a delightful dessert featuring juicy blackberries baked under a crunchy oat and almond flour topping. Enhanced with warm cinnamon and fresh lemon zest, it is a perfect balance of sweet, tart, and nutty flavors. Served warm with vanilla ice cream, this crisp is a comforting treat that’s easy to prepare and perfect for any occasion.

Ingredients

Filling

  • 2 pints blackberries (24 ounces)
  • 1 tablespoon cane sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Topping

  • ¾ cup whole rolled oats
  • ¾ cup almond flour
  • ½ cup brown sugar
  • ½ cup crushed walnuts
  • ¾ teaspoon cinnamon
  • Heaping ¼ teaspoon sea salt
  • 6 tablespoons firm coconut oil

For Serving

  • Vanilla ice cream

Instructions

  1. Preheat the oven and prepare dish: Preheat the oven to 400°F (204°C) and grease an 8x8-inch or similar baking dish to prevent sticking.
  2. Prepare the blackberry filling: In a large bowl, combine the blackberries, cane sugar, cornstarch, lemon juice, lemon zest, and vanilla extract. Toss gently to coat the berries evenly with the mixture.
  3. Make the crisp topping: In a medium bowl, mix together the rolled oats, almond flour, brown sugar, crushed walnuts, cinnamon, and sea salt. Using your hands, work in the firm coconut oil until the mixture becomes crumbly and well combined.
  4. Assemble and bake: Scoop the blackberry filling evenly into the prepared baking dish. Sprinkle the crumbly topping evenly over the berries. Bake in the preheated oven for 25 to 35 minutes or until the fruit is bubbling and the topping is golden brown.
  5. Cool and serve: Remove the crisp from the oven and let it cool for about 5 minutes. Serve warm topped with a scoop of vanilla ice cream for a delicious contrast.

Notes

  • You can substitute walnuts with pecans or almonds for a different nutty flavor.
  • Use frozen blackberries if fresh are not available, just thaw and drain excess water before mixing.
  • Firm coconut oil is essential to create the crumbly texture for the topping.
  • For a gluten-free version, ensure oats are certified gluten-free.
  • Letting the crisp rest for a few minutes before serving allows the filling to thicken slightly.
