Description

A decadent and visually stunning Black Forest Trifle combining layers of chocolate swiss roll soaked in kirsch, smooth chocolate custard, whipped cream, cherry jam, kirsch-soaked cherries, and brownie bites, topped with fresh cherries and grated chocolate. This no-bake dessert is perfect for special occasions and serves 10 guests.

Ingredients

Chocolate Custard

  • 150 g dark chocolate, chopped
  • 500 ml ready made custard

Whipped Cream

  • 600 ml double cream
  • 2 tbsp icing sugar

Base and Mix-ins

  • 300 g chocolate swiss roll or chocolate sponge
  • 4-5 tbsp kirsch (plus 200 ml for soaking cherries)
  • 400 g fresh cherries soaked in 200 ml kirsch
  • 100 g fresh cherries (for decoration)
  • 200 g cherry jam or conserve
  • 150 g brownie bites
  • 10 g grated chocolate (for topping)

Instructions

  1. Make Chocolate Custard: Place the ready made custard and chopped dark chocolate in a pan over low heat. Stir continuously until the chocolate is fully melted and the mixture is smooth. Once combined, remove from heat and allow to cool completely.
  2. Whip the Cream: In a large bowl, add the double cream and icing sugar. Whisk the mixture until soft peaks form, being careful not to over-whip.
  3. Prepare the Swiss Roll: Slice the chocolate swiss roll into 1-2 cm thick slices or chop chocolate sponge cake into pieces. Drizzle 4-5 tablespoons of kirsch evenly over the slices to soak.
  4. Assemble the Trifle - First Layer: Arrange the kirsch-soaked swiss roll slices around the edge and across the bottom of the trifle bowl to form the base layer.
  5. Add Chocolate Custard and Cherries: Pour half of the cooled chocolate custard evenly over the base layer. Top with half of the kirsch-soaked fresh cherries and half of the brownie bites.
  6. Add Whipped Cream and Cherry Jam: Spread half of the whipped cream over the cherry and brownie layer, then pour a layer of cherry jam on top.
  7. Repeat Layers: Repeat the layering process again with the remaining swiss roll, chocolate custard, kirsch-soaked cherries, brownie bites, whipped cream, and cherry jam.
  8. Finish and Decorate: Spread the remaining whipped cream smoothly over the top. Decorate with fresh cherries and sprinkle with grated chocolate.
  9. Chill: Refrigerate the trifle for at least one hour to allow the flavors to meld and the dessert to set before serving.

Notes

  • Kirsch is a cherry brandy that adds authentic flavor; it can be omitted or substituted with cherry juice for a non-alcoholic version.
  • Ensure the chocolate custard has fully cooled before layering to prevent melting the whipped cream.
  • The dessert is best served chilled but can be stored in the fridge covered for up to 24 hours.
  • Feel free to use chocolate sponge cake if swiss roll is unavailable.
  • Adjust the sweetness of the cherry jam or conserve based on personal taste.
